Beef Wellington

I plan to do this for Christmas lunch and have ordered a nice cut of beef fillet which I'll pick up on Saturday morning, Christmas eve.

Once before I did beef Wellington or perhaps it was just a pork fillet in a pastry case, and I remember it not being perfect.

What are the pitfalls?

Should I make specially sure the pastry is hermetically sealed round the meat?
Should I add oil or fat to the meat before wrapping it in the pastry?
Oven temperature?
How do I prevent the pastry getting too soggy underneath the meat?

I have made Beef Wellington twice so far and as tasty as it was I'd like the beef to be a little more cooked and the bottom a little less soggy. Problem is the longer I leave it in the oven, the top starts to burn.

Preparing the best beef wellington can seem really daunting at first because of how intricate it may look. I know I was afraid of making it even though I have wanted to try it for such a long time. I have wanted to make something really nice for my family for Christmas that wasn’t turkey or ham. That seems too plain and basic if you ask me. I love this YouTuber. I have watched several other video tutorials that he has put out and he keeps every thing simple and clear cut, but also adds a little comedy in the mix.

I truly hope this helps you as much as it helped me.
