Sprouts go well with chestnuts, and chestnuts are the base of some veggie bakes. Such as this one:

I've made a similar bake a long time ago when we were vegitarians.
You could put the sprouts in the mixture, or serve seperately.
I think you can buy jars of chestnuts ready prepared.

Sweat some thinly sliced onions. Add sliced sprouts. Add bacon and pine nut kernels. Enjoy

Thanks all of you for some tasty ideas. I will try them all. Have to get some more ingredients tomorrow.

Just found this for my turnip - rather unhealthy but looks delicious. thepioneerwoman.com/cooking/turnip-gratin/

I make this veg gratin quite often. It makes a super dish to go with a roast, gammon, or as a vegetarian meal. You could serve sprouts as a side dish with it.

Yes Pearl Barley, it also makes a nice change from rice in Rissotto and is used a lot in Scotland in Soups and stews.

You could try this frittata without the bacon. It can be eaten warm or cold. I made one today, baked in a loaf tin with half the recipe. I included various vegetables, which I cooked/roasted first: butternut squash, leeks, new potatoes, peas, carrots, sprouts and sweet corn. I don't line the tin with Parmesan as in the recipe, as I found it difficult to remove, so use a non-stick parchment.

Thy both sound interesting and different, thankyou. Would never have thought of sprout lasange!!

Felice, is that pearl barley? Have never used that.

I made one last Saturday which was Burns supper based. You could chop the sprouts and carrots etc into it.

Cook some barley in veg stock, the amount dependant on the portions needed but about half a cup per person.
In a wide frying pan melt some butter add a finely chopped onion and cook until opaque but not brown
Add half a cup of oatmeal and a little water(I added a little Marmite to the water), cook for 5 mins with a lid on.
Add the cooked drained barley, veg and cook for another 5 mins with lid on adding extra butter or water if needed.
Add smoked paprika, black pepper, garlic powder, salt?, coriander powder or any other spices you like.
Mix in some freshly chopped parsley and serve.

It went very well and got a lot of compliments.
This can be frozen and kept for up to 3 months.
Mix well

You've just reminded me of my old "signature dish" - sprout lasagne!

Basically a cheesy sauce with lots of butter, cream, pepper, any veg you like including sprouts, encased in sheets of lasagne. The sprouts somehow lose their bitterness. It's nicer than it sounds, honest!

Just that really. When I have veggie bakes in restaurants they are often really delicious, I want to recreate at home. I have some sprouts to use, plus leeks carrots and a turnip(not sure why I got that!)

I have made a leek and stilton soup which was good.

I wouldn't use bacon being veggie, but maybe cream, and cheese.Possibly breadcrumb or chopped nuts on top. Any ideas please.
