What's in your sandwich?

DH loves sandwiches and I make some every day, usually with fillings he likes. The other day he announced that he's getting fed up with the same fillings!

So, before I tell him 'to make his own darn sandwiches', I'm looking to enlist the help of GN for suggestions for great fillings so that he can only look on with envy at my super-delicious creation - for me grin.

Any ideas?

My favourite is an, almost, hard boiled egg, still warm, in white bread with salad cream.

Avocado and smoked salmon in granary bread.
Grated cheese mixed with grated carrot and a dollop of Branston pickle. Delicious. smile

Ham, cheese and home-made tomato chutney or brie, cranberry and sliced red grapes. Yummy grin

My son loves Pot noodle sandwiches, well to be honest he puts everything between 2 slices of bread

Yesterday, warm leftover cooked chicken, sauteed onions, lightly sauteed red peppers, baguette (some bread removed from the middle) smeared mixture creme fraiche with soy sauce, honey and anise powder. Our youngest dd favorite, request of her little children. Yummy.

I remember being at my Yorkshire granny's house one weekday when I'd was about four. Her youngest son came in from work and helped himself to two slices of bread sandwiched together with brown sauce! She still had three or four of her twelve children living at home at the time so the evening meal wasn't served till they were all in. She cooked on an open fire with a side oven. Amazing woman.

I know its off topic but the worst sandwich I ever saw was curried squid and spinach on white bread which had turned a revolting colour due to its contents. It was at an 'everyone bring a plate' type tea party. It was very difficult to refuse one proffered by the proud producer of these delights but I just couldn't face it!

I enjoy making sandwiches, and like to make a variety, e.g. if I'm making a plate full. DH can't eat tomatoes, so I don't use a whole tomato up, and am always left with a bit.

Someone up the thread mentioned "chopped tomatoes" - rather than sliced. Now that is a brilliant idea - that way, I can just slip the chopped bits of tomato into my portion of any salad or sauce. Why didn't I think of that?

So now I need suggestions for the leftover fiddly bits of cucumber, and half slices of ham....

Wholemeal rustic bread essential. Fillings Chicken and Bacon, Chicken Tika, Chicken and Stuffing, Prawn and Cream Cheese or Bacon and Egg.

Can't abide cheese and onion or pickle.

You've just reminded me of one they used to sell at the first place I ever worked...banana, cream cheese and honey. Not a combination I would have come up with but oh so good. I hate mayo but tuna mixed with cream cheese, lemon juice and black pepper is a delicious alternative. Toasted banana sandwiches (lots of butter which I don't normally like in a sandwich, made in a sandwich toaster) is the best though
