Cakey scones

A few weeks ago I went to a craft fair. I bought some fruit scones, they were huge and looked delicious. They were definitely delicious but were almost a cross between a scone and a victoria sponge mix with fresh fruit in them! I've searched for a recipe online so I can recreate these yummy delights but have had no success.
Can any of you lovely Gransnetters help me?

Were they made with buttermilk? I make fruit scones with buttermilk using an old Mary Berry recipe.

These are supposed to be like cake texture. They use sour cream. I've never tried them.

I make my scones with buttermilk and they don't taste 'cakey' (make my own buttermilk too)

Crossed post with Marydoll - I think she's got it correct about the sour cream ?

I actually don't know. I was curious, so looked it up. grin

Might try that recipe Mary. I'm a useless baker (but a good cook) and all I can make successfully are scones, meringue and cheese straws (from left over, ready-made pastry!)

Might I perhaps be about to expand my - not repertoire- I'm struggling to find the correct word ???..

Bad brain day!

I've had the same problem when making brioche bread.
The recipes given are too 'cakey' for me.
I think it depends in the quantities (and types) of milk and egg in the recipe.
Experiment with the milk/egg additions, until you find the one you like.

I'm not sure if it is what you are looking for but Yorkshire Fat Rascals are a cross between a scone and a cake. There is a recipe if you scroll down this site

Strawberry sour cream scones look so GOOD!!

As do the Fat Rascals!!

I use a Delia Smith recipe using buttermilk ..or if I've got none of that in I will use natural Greek yogurt but it's not quite the same. Still yummy though.

I thought of Fat Rascals too Cold, thanks for the recipe link I'd love to have a go at making them. I'd never heard of them till I moved to Yorkshire 9 years ago but am definitely a convert!

I use a receipe I found some years ago in the Sunday paper, it is just double cream, flour, baking powder and sugar, makes a really delicious scone. Very quick and easy to make and works well with single cream as well, and still good if you find some out of date cream in your fridge!

Could you give us the recipe please Hilltopgran?

I make scones with natural yogurt rather than milk - makes them delicious light and spongey- in a good way.

Anya. Culinary delights!!!

I make loads of scones and everyone loves them. I use Paul Hollywood's scone recipe and change the milk to creme fraiche. Since I have been making them I have converted loads of my friends and family to his recipe smile

I make mine from the Mary Berry recipe.

Are you sure they weren't rock cakes? :-)

I know that this is not about scones, but worth a mention. A Lady that I know makes the most fabulous fairy cakes. They are so deliciously moist, the best that I have ever tasted. Her secret is to add a tablespoon of natural yoghurt to the mix.

They sound nice but I like my scones to be scones not a amalgamation of things.

Sounds like Rich afternoon tea scones, these are made with egg and sugar. Think my recipe is out of an old Good Housekeeping cookery book.
