Why not a fish pie? You can get a fish pie mix at most fishmongers or supermarkets - usually smoked haddock, salmon and cod - lightly poach in milk, use the milk to make a white sauce and then top with mashed potato and a sprinkling of cheese and brown in the oven.
I can't help but I really fancy fish pie now.
I've been using a recipe that Gd posted which is plaice ( or other white fish) covered in a small pot of double cream, scattered with grated cheese and baked. Simple but delicious.

I don't eat fish any more but this was a favourite.
But two of those three suggestions have cheese on top. The OP doesn't eat cheese.
Crush crisps and sprinkle on top of the mash? That makes a tasty crunchy topping.

Risottos, with any mix of vegetables. Veg curries, Cheese pudding (bread, a strong cheese and eggs), stuffed vegetables (pepper, tomatoes or cabbage). Last night we had a baked pasta, leek, mushroom and blue cheese for our main meal.
Google Vegetarian or vegan recipes. You will be inundated with recipes.
Sweet and sour prawns with rice.
Or baked cabbage with a walnut and pineapple stuffing.
I have a recipe for nut roast too. Nice with cashew nuts.
Kale and mushroom lasagne à la River Cottage. You can miss off the grated cheese that is sprinkled on top.

I don’t eat much meat or fish and my go to when the family are indulging is a ratatouille base with some supermarket chilli beans or curry beans chucked in. Make big batch and freeze. Also lucky in that in the next village a talented lass is providing veggie meal boxes on a Friday. Can be eaten hot or cold. They are delicious. No good to you but she adapts a lot of her recipes from bloggers/ writers like Deliciously Ella and Hemsley Hemsley so it might be worth looking on their sites.
DD's fiance is vegetarian and it has been a steep learning curve for me, trying to devise interesting meals.
I made mushroom and squash pie for him on Christmas day.
I roasted the squash in the oven until soft,
soaked some dried porcini mushrooms
reserved the mushroom liquor for the gravy.
Then, I fried off some chopped onion and button mushrooms until soft,
added some baby carrots,
the cooked squash,
a little mixed herbs,
a teaspoon of tomato puree,
a little touch of garlic puree,
a pinch of chilli powder (you can leave it out)
a vegetable stock cube
and the mushroom liquor.
Simmer away until all the vegetables soft and the liquid thickens. (If not, add a little cornflour mixed with cold water.)
I just made it up as I went along. You could add most vegetables to it, I'm sure it would work.
I made it the day before and added the puff pastry when I was ready to cook it.
I don't like vegetarian dishes, but surprisingly it was actually very tasty and flavoursome. He demolished the whole pie!
How strange, a post I made has gone AWOL.
Immediately after i had written my post above I realised the request was for ''no cheese' so apologised and suggested other veggie recipes.
I also suggested googling 'vegetarian recipes cheese-free' or 'fish recipes cheese free'. I find googling for recipes is incredibly effective.

Marydoll--how long did you cook the pie for and at what temperature? Sounds really good.

Problem with vegetarian recipes is they are heavy on cheese.

I'll find those recipes later - they're from a book called Not Just a Load of Old Lentils, by Rose Elliot.
Jeannie, the cooking of the vegetable stew took about 45 mins, but that included preparing the vegetables and simmering in a pot on the stove until the vegetables were cooked. The little veggie stock pots are on special just now, so I threw one of those in to the mix.
I left it in the fridge overnight until needed.
I used half a packet of supermarket ready made puff pastry, painted the pastry with milk/egg and cooked for about 20 mins at gas mark 7. It was so easy to make. I notice squash is on special in Lidl this week. Enjoy.

My husband is a vegetarian and he loves aubergine lasagna. Cut and slice three aubergines and lightly bake for 8 minutes on grease proof paper in oven with a pinch of salt and drizzle of olive oil. In saucepan add one finely chopped onion, three different coloured peppers, two tins of chopped plum tomatoes, crushed cube of garlic and a chopped courgette, drizzle of olive oil. Cook for about 8 mins. Make a white sauce roux. Layer the aubergines with tomato mixture and then add layer of lassagne, then white sauce then repeat. Add mozzarella as optional and finish with pinch of paprika. Cook in medium oven for about 20-25 mins. Serves 4 easily.
For the stuffed cabbage:
Using a firm cabbage, 2-3 lbs, cut off outer leaves, and base. Scoop out inside leaving 1 inch thickness, then boil for 10 minutes,and drain.
Stuffing : sautee a large onion, chopped, and 3 tomatoes in veg oil, add 4oz breadcrumbs, Add a 15 oz can of pineapple, drained and chopped, and 6 oz walnuts. Season with s&p, lemon juice, 2 tsp soy sauce.
Pile stuffing into cabbage shell and bake in a deep casserole, covered.
I think I added a sauce made from tinned tomatoes, or some veg stock plus tomato puree, and sauteed onion, to the casserole pot, otherwise it will be dry.
Bake at 350F or gas 4 for at least an hour.
