For the stuffed cabbage:
Using a firm cabbage, 2-3 lbs, cut off outer leaves, and base. Scoop out inside leaving 1 inch thickness, then boil for 10 minutes,and drain.
Stuffing : sautee a large onion, chopped, and 3 tomatoes in veg oil, add 4oz breadcrumbs, Add a 15 oz can of pineapple, drained and chopped, and 6 oz walnuts. Season with s&p, lemon juice, 2 tsp soy sauce.
Pile stuffing into cabbage shell and bake in a deep casserole, covered.
I think I added a sauce made from tinned tomatoes, or some veg stock plus tomato puree, and sauteed onion, to the casserole pot, otherwise it will be dry.
Bake at 350F or gas 4 for at least an hour.
