The rise of macaroni cheese!

Or, rather, mac 'n' cheese. Why, what's it all about?

Macaroni cheese is a rather dull meal from my childhood, not really worth revisiting, and definitely not a 'side'.

Has anyone got any really delicious recipes to change my mind?

Sounds lovely from these recipes. Trouble is, I remember being disgusted and nauseated as a child being forced to eat a slimy white sauce version for school dinner. I could hardly get it down without retching! But worth trying the versions above - think I'd like it now!

Don't think I have ever eaten it shock. I never had "school dinners" as I would go to an Aunt who insisted on making a "proper" meal (cooked from scratch of course). Father was not very adventurous when it came to food and would have looked on macaroni as "foreign rubbish". Think I may give it a try now!

I can't say that it does anything for me. A childhood favourite of mine is scrambled eggs but somehow it doesn't seem to be quite so delicious these days. Maybe it needs some strips of smoked salmon to make it more luxurious.

I do it with a strong cheese sauce etc but put a layer of wilted spinach in the bottom...yummo!

I make macaroni cheese in the normal way, but in the bottom of each individual dish you will find a hard boiled egg cut into 4, some fried bacon, fried mushrooms and cherry tomatoes, topped with the macaroni cheese. Delicious, lots and lots of cheese to form a crust on the top.

My grandson has insisted on having 'cheesy pasta' at our house every week for the last 5 years. Apparently I make the best cheesy pasta ever. I cheat with bisto cheese sauce granules made up with whole milk and copious amounts of strong cheddar then just add cooked macaroni. If there's any left his mum or dad soon polish it off.

It annoys me that it is called mac 'n' cheese now. Why can't people write macaroni?

missdeke Wed 03-Jan-18 10:44:15

I love it! Had it last night in fact, I usually put broccoli or cauliflower in it and breadcrumbs and grated cheese on top. Delicious!!!

EmilyHarburn Wed 03-Jan-18 10:44:54

My sisters American grand children love it. I was amazed last year when I visited, that that was the only meal they asked for and would it seemed have eaten it twice a day, day on day.

Nandalot Wed 03-Jan-18 10:46:11

It is the only thing that DGS and DGD both like.

tonibolt Wed 03-Jan-18 10:55:43

I usually cook it when husband is away as he can’t stand it. Although I enjoy it, I don’t like the modern trend for adding it as a side dish.

Grandma70s Wed 03-Jan-18 10:59:58

Never call it mac’n’cheese unless you’re American.

It can be very good if well flavoured.

grannytotwins Wed 03-Jan-18 11:08:55

I love it. I make it the traditional way with a white sauce, loads of cheddar and Parmesan added for extra flavour. I put a lot of cheese grated on top and brown it to total deliciousness. It’s macaroni cheese though, never mac’n’cheese!

curlilox Wed 03-Jan-18 11:10:02

We have it occasionally, but I always mix in chopped cooked bacon and fried onions.

Broccoli layered on the bottom adds value as

NanaandGrampy Wed 03-Jan-18 11:27:44

I love really cheesy macaroni cheese so will be trying some of the recipes from this thread.

I think its popularity is from the US where it is considered a viable side for some meals along with apple sauce !!! Now that's one I don't get- apple sauce with pork by all means but as a side dish....I don't think so !!!

marpau Wed 03-Jan-18 11:33:58

I add a large tablespoon of horseradish sauce and chopped roasted peppers

kittylester Wed 03-Jan-18 11:36:59

Dh is glad I started this recipe as he has been macaroni cheese deprived for years and I might be motivated now!

Is there a reason why it must be macaroni!

Diddy1 Wed 03-Jan-18 11:42:22

I love it, and make it with Mums recipe, the Grandchildren and my Daughter love it too, DH, no way, so I make it only when my family come.

IngeJones Wed 03-Jan-18 11:42:49

It was about the only thing I enjoyed on the school dinner menu. Or at least the only thing that wasn't 90% gristle.

pamdixon Wed 03-Jan-18 11:43:51

I've always loathed it and remember years ago, going to lunch with a fiend, when my 3 children were little. She produced a vat of Macaroni cheese- I knew my wouldn't touch it, so I had to have about 3 helpings and pretend I loved it - mega yuk!

Grannyapple25 Wed 03-Jan-18 11:50:16

Macaroni Cheese was about the only thing my mum could cook that we all loved. Sometimes she'd put sliced tomatoes on the top, under the grated cheese.
Can't eat it these days without thinking of her

phoenix Wed 03-Jan-18 12:05:48

Mr P makes a delicious version, with onion, mushrooms and bacon added to it.

MissAdventure Wed 03-Jan-18 12:34:05

It sounds much more tasty with some of these extras added. I might be tempted to have a go. smile

marpau Wed 03-Jan-18 12:37:51

Can anyone remember macaroni pudding using sweet white sauce instead of cheesy one?
