I'm asking for D can any of you experienced bakers tell her how to make chewy rather than brittle cookies ? She follows the recipe to the letter so is over working the mix or over cooking ?
I haven't baked for years blush

I think the problem is the flour, nina.

Americans, who invented the cookie, use what they call 'all-purpose flour'.
It's different from our plain flour and our self-raising flour, but nearer to self-raising.
So I would use SR flour, and perhaps syrup instead of sugar, to keep the cookies moist, and be carefgulk not to overcook them.

Recipes containing condensed milk always come out chewy for me. My favourite here, but more on the Carnation site.
