Gluten and dairy free pudding recipe - please!!

DH's brother and his wife are coming for an over night stay next week. As it happens, next week is a really busy one for us and I won't have time to do much in the way of preparation, so I am hoping someone can come up with a fast gf and dairy free pudding. Main course is (currently) going to be salmon!

I’ve looked at Marks but nothing there.

The boys love sponge pudding and custard if possible.

I used olive oil instead of the butter and an extra 100g ground almonds instead of the flour.
It was still sensational <blushes modestly>grin

Fresh fruit and non dairy ice cream ( Ben and Jerry’s do non dairy ice cream and it’s yummy). You can make crumble topping with oats and non dairy marg and Demerara sugar if you want something hot.

What about a dairy free rice pudding. You can serve that hot or cold and serve it with fresh fruit, stewed fruit or whatever takes your fancy.

Go onto Pinterest, they have thousands of recipes, most with step by step instructions and excellent photos. Type in what you are looking for and they will come up with suggestions.

Cheat kitty. Buy some gf brownies, warm gently and serve with berries and posh looking cream quenelles. Life’s too short to stress smile.

Fresh red berries, meringues ( made a couple of days in advance) sorbet. Arrange in individual glasses and sprinkle with edible gold glitter.
