We've got some leftover veg bits to use up so I'm doing a stirfry with cashew nuts throw in. Tomorrow is Saturday curry night and my OH is making his own recipe rogan josh which is just delicious. What are you having?

Tonight we are having creamy chicken casserole with roast potatoes, peas and honey roast carrots. I've also bought two tiny Romanesques (are they called?) which we will have when I've investigated how to cook them.

Really lazy one the other night, 2nd evening at dd's while she was away for work, dinner for me and dh, SiL and 2 little Gdcs.

Having decided on sausage and mash, and walked to the nearby Coop, I then decided I really couldn't be faffed to peel a lot of spuds, so it was 2 packs of best chipolatas (quick to cook), a pack of Coop potato wedges (just bung in the oven) and some purple sprouting broccoli, which I didn't think increasingly fussy Gdcs would eat, so baked beans for them.
It all went down v well, and Gdcs even ate some of the broccoli.
So that's one I'll most definitely be doing again when on childcare duty.

Roast lamb, roast and mashed potatoes and mushy peas. If I can fit it in, syrup sponge ( homemade ) and custard.

We always have our main meal at lunchtime, together. Sometimes my husband ( Swiss-trained chef) makes it and sometimes I do (I like cooking.) We always make too much of whatever it is and freeze a couple of portions for the following week. In the evening, we usually do our own thing. With me it tends to be half a tin of soup with a cheese sandwich, or veggie sausages with a fried egg and fried tomatoes, or sardines on toast, or occasionally a scrambled egg with smoked salmon. My husband tends to make sweet potato soup, or pasta.

I`m having beef casserole and dumplings.smile

alchemilla Sun 17-Mar-19 14:27:39

fairisle love dumplings. I'm pescatarian so I have a lovely pot of vegetable soup with chick peas but will now add dumplings. Thank you! And it's cheap as chips .......

Beef casserole for us too but am rubbish at dumplings - but really fancy them now that I have read what fairisle is having!! hmm

Look up Delia's Parsley dumplings. I use them all the time when reheating casseroles/stews and my fave - mince. Reheat on stove till up to boil. Pop dumplings on top,add lid and put in oven @ 180 fan for 10 mins, remove lid and do another 10 . I always add extra stock as they absorb a lot. When GC first had them they were very suspicious, never having heard of dumplings but now it's a meal often requested.

I hate dumplings!!

Tonight we are having Italian omelette, oven chips and salad.

DanniRae Mon 18-Mar-19 10:29:14

I got some nice Angus beef mince out of the freezer last night to make some burgers for tea today, so I'll do some scalloped potatoes with them and use up the mushy peas from yesterday--------waste not want not.

Anyone else so disorganised that lots of food in the freezer stays frozen and most meals are made with recently bought fresh items? Smoked mackerel and salad tonight.
