help - cream cheese frosting

I haven't got any cream cheese but DH fancied a carrot cake - so I just drizzled some lemon icing over the top, it was lovely.

I’ve always had a problem with cream cheese frosting being too runny.

I recently made this banana cake banana cake by Jamie Oliver which uses a cream cheese frosting and it was delicious. There’s not much cream cheese in it but it tasted like cream cheese frosting rather than butter icing and kept its shape well.

I’ll definitely be making this again- just waiting for the bananas to soften up.

thank you every one for your suggestions - yes i did use full fat philidelphia and yes i did use proper butter - chewbacca i think i will give your recipe a go otherwise i think i might just cheat and use betty crocker !! grin

Less sugar, more cheese. As the others have said, full fat cheese.

It's just cheese and icing sugar really. Super easy, but shouldn't be over sweet. Should have a slight tang to it.

Using the easy spread versions of Butter will also result in a softer frosting, tye old fashioned block butter works best.

I always drain my cream cheese first - put it in a clean tea towel, wrap the towel round it and squeeze - it’s amazing how much fluid comes out. It never fails to make beautifully thick frosting smile

The recipe I've used was 100g butter, 100g full fat cream cheese and 200g icing sugar. There seems to a high fat to sugar ratio in the recipe you've used and that would make it more runny.

Did you use full fat Philadelphia? Low fat doesn't tend to work. The recipe is ok.

can any one help with a tried and tested recipe for cream cheese frosting - made a beautiful carrot cake yesterday but my frosting was so soft almost runny even after being in fridge for 4 hours - did i over beat it - or are my measurements wrong - 50g butter 2oog philidelphia cheese - 75g icing sugar (american recipe) i was sooo disappointed sad
