Mushroom and bacon Alfredo

I've just shoved a chicken casserole in the oven to cook slowly. Chicken filets browned with onions, garlic, green peppers and some flour to thicken, added potatoes and carrots, covered with stock and seasoned with mild chilli and ginger. I love it when the meal is contained in one pot. I may do some green beans as an accompaniment, but on the other hand may not bother.

I’m trying out Nigella’s Bhorta recipe from t’other night.

This to be followed by carrot cake (un-iced) with vanilla ice cream and some salted caramel sauce which I’ve just made for the first time - Jamie recipe and it’s very moreish, we actually tussled over licking the pan!

It also has onions, tomatoes (and today mushrooms and broccoli) and is topped with toasted pine nuts. It's really easy to make and real comfort food.

we very rarely have dinner these days. We used to have to eat late, too late, because of OH's job- so now we have a late proper lunch, then soup and simple stuff in the evening, with a yogurt- half fruit and half plain. Much better for your health, work calories off working in garden or walking, etc, sleep better too. Very lazy this lunchtime and had bacon wrapped chipolatas (yes... I know ;) ) with small portion of pasta and green beans.

Tonight, I am making meat and potato pie (using 'foraged' potatoes), with cauliflower and home-grown brussels sprouts.
When I was a child, it was probably my favourite meal, but nowadays it is a rare treat that I look on as an autumn/winter comfort food - and very economical too

Tonight will be baked salmon, roasted Mediterranean vegetables and cous cous.
I’d rather be having your roast pork (from last night) Coolgran, only without trifle to follow. I prefer just fruit set in jelly.

Roast pork with crackling. Boiled and roast potatoes, roasted carrots and parsnips, butter beans tossed in butter. Home made Yorkshire puddings and gravy.
Trifle after.

Sometimes Blue Sapphire that's just what's needed. When you're hungry but not in the mood to think what for.....that sort of comfort food is perfect, I think.

Did you use filo pastry for bottom and sides as well as the top?

Yes, the tin was lined with filo sheets, buttered and covering the sides and bottom and overhanging the tin. The filling was put in and then filo sheets were put over the top and the rough edges pulled up and crumpled and brushed with butter. It looked a bit like a very big Greek baklava (but without the honey) but was absolutely delicious.

Always happy any time to let you have the recipe. Lots of the prep can be done sitting down (it's been a weekend of sitting down for me!!) and I'm sure your GD wouldn't find it at all ambitious.

Now, Soupy that sounds like a good idea!

Our butcher does lovely pork steaks with stuffing in the middle so DH cooked two of them in gravy in the oven to go with the roast potatoes, carrots and cabbage.
We were too full for pudding!

Well, very ordinary here; came back from DD's, everything in freezer, so had fried egg, chips and beans, easy, quick and delicious! Just simple comfort food and ok once in a while.

We had venison steaks (whoopsies from Waitrose) with gravy made from pan juices and red currant sauce, horseradish mash, sprouts from the garden and carrots. Yummy! Too full for anything else.
