Season of mists and mellow soupfulness....

It felt sufficiently autumnal yesterday - grey and wet - for me to dig out some frozen ham stock and make a big batch of thick, main-meal soup, to use up some of a mass of veggies. Ate some, some in the freezer.

Today I was going to do similar with some chicken stock out of the freezer, but it’s sunny!
Will still do it, though, since the stock is now thawed.
Anyone else feeling autumnally soupful lately?

Gathered up vegetables that were around today and made creamed soup with a chicken stock base. The flavour is always deeper day after it’s made so we’ll have some tomorrow.
I like to use a soup maker.

Being a single fella and a love of one pot cooking some most of these soups will get made sometime over the winter months.

Which lentils do you mean, Grannmarie? Green/Puy?
I use loads of red lentils and never soak them.

Unless it is very warm we always have a “bucket” of soup on the go.
My current favourite is the BBC sweet potato and red lentil soup. The coriander in it works beautifully but don’t bother faffing about grating the veg. It is going to be blended anyway so rough chopping is perfectly adequate.

Sweet potato, red pepper, carrot, onion obviously. Red lentils (no I don’t t soak them) tin tomatoes stock and THYME.
Grandson loves it....he who won’t touch a vegetable.

I made beetroot soup for the first time ever . I was giveN a bag of freshly dug in various sizes . Steamed them in the microwave and added apple , celery ,carrot and onion. I bought a soup maker pre pandemic and it’s been a godsend. A basic veg soup in 20 minUtes aNd No hanging around watching it. Apologies for the random capitals. Don’t know how that happened.

Super soups, ladies, those will extend my somewhat limited repertoire!

I make soup all the year round, mainly,

lentil with ham hough or ribs, carrot, leek, potato, parsley...

chicken broth with chicken thighs that I can scoop out when cooked for curry/stir fry/sandwiches...

Tomato and lentil with tinned tomatoes, onion, curry powder...

Lentils must be soaked overnight and well rinsed!

Some for me, some for the freezer.
Useful to take in flasks for garden / park meet ups now we can't visit indoors in Scotland.

I am just waiting for the first equinoctial gale, when it is cold enough for me to be wrapped in jumpers, and watching the leaves being blown around, then I will make the first batch of pumpkin and chestnut soup.

Absolutely feeling soupy! DH often concocts soup from whatever is left in our weekly veg box. No recipe, no measurements, but it's always delicious. Thus in this household, "you cannot step into the same soup twice...", so to speak.

That’s reminded me, paddyanne - in the freezer I have 2 half leg of lamb bones, each with a very little meat still on. I’ve been keeping them for a winter Scotch broth type of thing. I take off what meat there is, simmer the bones for a good hour with onion and pearl barley, then add other veg inc. turnip (if I can find any - goes v well with lamb IMO) and just add the meat and some frozen peas (essential for dh!) for the last 5 minutes.
A very tasty winter warmer.

I make soup most days ,only recently learned not to make huge pots as theres just 2 of us now.This week we've had Scotch Broth made with a lamb shank,chicken rice and sweetcorn with the chicken shredded into it and mushroom,todays is leek and potato which I'll blend and keep some cubed potatoes to put in with loads of parsley when its blended .Tomorrow will be a smooth lentil as I'm boiling ham for tonights dinner

When I was posting on the cookery book thread yesterday I remembered a little book of recipes a Dutch colleague gave me years ago because it contained the Dutch pea soup recipe her mother made and I had had eaten at her house. It was cooked with a ring of smoked sausage in it and was hearty and absolutely delicious. That should cheer the winter up!

Used my chicken stock to make a big pan of minestrone earlier. It was just going to be the usual veggie thing but since I had a lot of fresh basil, a tin of tomatoes, and a couple of handfuls of orzo pasta...

Chopped/shredded green veg will go in shortly before we eat. I was tempted to make some garlic bread to go with it, but nobly desisted. Will have plenty of grated cheese with it though.

I love soup, especially the thick vegetable sort. I also often add a tin of chickpeas or mixed beans, and a slug of tabasco to liven them up in the cold weather.

Have had spicy parsip and carrot for the last fee days,tomorrow will make roasted butternut and red pepper and red onion with sweet potato soup tomorrow

I eat soup every day for lunch, even in very hot weather, but rarely eat bread with it. I make minestrone, tomato, courgette and chicken. Love the pressure cooker!

I'm looking forward to my first soup lunch of the season, my favourite lunch by far. Like Gulligranny I love French onion with a cheese crouton.
I will eat any soup as long as its not white and doesn't have cheese in it.

I’ve just made chicken and vegetable soup. Mainly leftover veggies from the bottom of the fridge, but I add a heaped tsp of chilli flakes.

I’ve whizzed some up and frozen it and DH will have the ‘stew’ version for lunch, he wants dumplings but he’s on a diet......I might let him have a slice of Nimble.

I've got a lovely ham shank in the freezer ready to make my thick pea soup, using soaked peas, ready cooked, and an onion and that's all. A cheap and very nourishing meal which does me a couple of days along with ham and mustard sandwiches in between. That'll keep the cold out !

When there's been a leftover of ham I freeze it to add to omelettes with mushrooms or ham and asparagus filling in pancakes. Quite versatile meat.

My other favourite is hot-pot which does for hours in the oven, the longer the better with some decent neck-end of lamb.

Someone mentioned lemon chicken---lovely. I've only ever poured the thickened lemon over roast chicken but haven't added it to soup, but will do in future.

I could eat these now grin Lovely grub !

Very timely - just been rooting around in the bottom of my three drawer freezer and wondering what to do with the bag of diced beetroot. I've put in the slow cooker with red onion, garlic, seasoning and a glug of olive oil.

I shall crumble feta cheese on top when serving.?

I've just bought a bag of onions as I have a fancy for French Onion Soup, one of my favourites at this time of year.

Chicken soup with an Asian twist is another fave, plenty of garlic, ginger and chilli to give the old immune system a bit of a kick, plus good old Leek & Potato.

DH has asked for Minestrone or Cock-a-Leekie, so they will be on my list to try out later.

Butternut squash soup and Courgette soup with Parmesan are particular favorites. Carrot and Parsnip - another. Soup for lunch feels like proper lunch and makes wonderful kitchen smells!

I’ve never added lemon to my chicken soup Maw, must try it!

I have add a soupçon of Thai red curry paste to butternut squash soup though WWMK2 and it was very warming......?
