Anyone know if you can successfully freeze cucumber? Had to buy a whole one yesterday and I know we won't use it all before it goes all soft & squishy.

I wouldn't have thought so. You'd end up with the same mush once thawed.

As it is 98% water, it will just turn into a block of ice and then collapse on thawing.

Make soup then freeze it. There arelots of recipes for cucumber soup available online.

I threw my cucumber soup away - even after following the recipe exactly it tasted bitter.

I had a glut of cucumbers from the greenhouse this summer and once the family, friends and neighbours got sick of them, I made green pea and cucumber soup. It was horribly bitter; inedible really. I agree with Callistemon, it's best pickled with thinly sliced onions.

I make cucumber soup, DH likes it in his flask as it’s not too thick.
If it tastes bitter, the cucumber must have been bitter in the first place I think, not really the fault of the soup.
