Scones

I think I've put this on here in the past.
There are many, many recipes out there for scones and I have tried many.
However, the ones I remember from long ago were soft and fluffy with a sharp under taste and they sort of stuck to the roof of your mouth. They weren't like cakes and every recipe I've tried turns out like cake.
I love to make these type of scones not cakes and if anyone has the recipe, I'd appreciate it

I make yogurt scones.

8 oz self raising flour
2 oz butter
2 oz sugar
250 ml plain yogurt.

Rub butter into flour to form breadcrumb texture. Add sugar and enough yogurt to form a soft dough. You may not need all the yogurt.
Brush tops with egg wash and bake in a hot oven until well risen and golden on the top.

I put the zest of half a lemon in mine, or you could put in some dried fruit, or fresh blueberries.
Wherever takes your fancy.

I love cheese scones. In fact it's very important that I never make them as I'd be even more like the side of a house if I ever did.

with a sharp undertaste sounds as if they might have been made with buttermilk? Yogurt and lemon juice would produce the same results.
