Ed Ball’s sponge cake on Celebrity Baking Show

Has anyone made this sponge that uses double cream instead of butter? I can find the ingredients but not the method. Did he whip the cream before adding the sugar? Help please.

He did whip the cream up with hand mixer.

I made this using double cream, I beat the cream and sugar, added the eggs and essence and folded in the flour using a metal spoon. I made half the mix for one cake, it turned out really well, quite a solid cake, I then filled it with butter cream and jam. It didn’t last long 😐.
