I made this using double cream, I beat the cream and sugar, added the eggs and essence and folded in the flour using a metal spoon. I made half the mix for one cake, it turned out really well, quite a solid cake, I then filled it with butter cream and jam. It didn’t last long ?.

He did whip the cream up with hand mixer.

Has anyone made this sponge that uses double cream instead of butter? I can find the ingredients but not the method. Did he whip the cream before adding the sugar? Help please.
