Exceedingly moreish cheese straws

I’ve just made a double batch to take to a big family do this weekend - they invariably vanish - so thought I’d post in case anyone might be interested.,

You need 2 non-stick, very well greased baking sheets.
Oven pre heated to 200 or 180 fan

200 Gm/8 Oz Extra mature Cheddar, grated (mild is no good for these)
100 Gm /4 Oz SR flour
50 Gm/2 Oz very soft butter
A good rounded tsp of English mustard powder
A pinch of cayenne pepper

Mix all well and give it a knead, it’s crumbly so best to roll out half at a time, to thickness of roughly a £2 coin, but it’s not critical..
Mark into strips with a flat bladed knife, lift carefully on to baking sheet - leave a little space between.

The original recipe (I’ve adapted it slightly) said 7-8 minutes, but 5-6 in my oven is plenty - they are all too easy to burn.
Slide as soon as poss on to a wire rack to cool. (And if your dh is anything like mine, keep him away if you want them for later!)

A double batch just fits nicely into one of the big M&S tins of Christmas shortbread - the ones with a deer on the front. Very handy! 🎄

I’m going to have to finish the tin of shortbread to make room for a batch or two 😈. It’ll be hard work but someone has to do it.

Planning on making these tomorrow. How crucial is the powdered mustard? I don't have any.

Have you got any made (English) mustard? I’d imagine that a really good heaped tsp of that would do. Dijon or any other wouldn’t work IMO.

I made these this morning and they are really good, I left out the mustard because I didn't have any and the local shop only sells made mustard but I don't think it has made much difference. I cooked mine at 200degs in my mini oven which is not a fan oven. Now wrapped in foil (as per Mrs Google) and stashed away for Boxing Day.

I make cheeses straws, recipe quite similar.

Mix in KA, form in long log, 3-4cm around, wrap in cling film, chill. Slice as coins and bake. Easier than rolling and cutting.

Many batches through this kitchen for nibbles.

Ooh I haven’t made these for years! I’ve got a vague memory of twisting them and sprinkling with sesame seeds before cooking
Going to make some tomorrow for the family Boxing Day buffet- wonder if they will last that long……

Thank you for sharing. I can successfully make most things but not cheese straws! Got my DGD coming this afternoon so I think we may make some together!

My book is already open on my kitchen worktop, only yesterday I was debating whether to make cheese straws and yes I will. I will be adding some turmeric to mine

It is not the same as your recipe OP, which sounds delicious
