Exceedingly moreish cheese straws

I’ve just made a double batch to take to a big family do this weekend - they invariably vanish - so thought I’d post in case anyone might be interested.,

You need 2 non-stick, very well greased baking sheets.
Oven pre heated to 200 or 180 fan

200 Gm/8 Oz Extra mature Cheddar, grated (mild is no good for these)
100 Gm /4 Oz SR flour
50 Gm/2 Oz very soft butter
A good rounded tsp of English mustard powder
A pinch of cayenne pepper

Mix all well and give it a knead, it’s crumbly so best to roll out half at a time, to thickness of roughly a £2 coin, but it’s not critical..
Mark into strips with a flat bladed knife, lift carefully on to baking sheet - leave a little space between.

The original recipe (I’ve adapted it slightly) said 7-8 minutes, but 5-6 in my oven is plenty - they are all too easy to burn.
Slide as soon as poss on to a wire rack to cool. (And if your dh is anything like mine, keep him away if you want them for later!)

A double batch just fits nicely into one of the big M&S tins of Christmas shortbread - the ones with a deer on the front. Very handy! 🎄

I adore cheese straws. Haven't had home made ones for years. I might have to get my resident chef to try these!

I could eat cheese all day Witzend and will definitely be making these. Thank you for posting the recipe..I may go wild and try them out too with different flavoured cheeses.

I've got that tin and keep biscuits in it lol, but I love cheese straws once you start eating them it's hard to stop.

I shall give those a go, I love cheese straws. Would I be able to hurl all the ingredients in my Kitchen Aid and use the dough hook?

HousePlantQueen, why ever not? I shove it all in my trusty old Kenwood Chef, and use the K beater - same as for pastry.

They do actually rise a bit, so I’d put a little baking powder in with the GF flour.

Ooh, thank you. I've made these before to a different recipe but I'd forgotten about them. I might have a go with this lovely new recipe and bake them in my new mini oven.

They are a firm family favourite with us. I grate carrot and add it to ours, to get a bit more veg into DGS. You can't taste it really and it just makes them a little healthier.

I might try these, if I can find any strong cheddar here in Germany. There is usually only one kind available. Perhaps a Gruyère would do.

To make them seasonal, I would cut them out with Christmassy cookie cutters.

They’d be fine, AussieGran59. Once properly cool, store them in an airtight tin.

My double batch all vanished within just over 24 hours. And I did remember to retrieve my Very Useful Tin.

Might add that I first tried these after dh bought some so-called cheese straws in Waitrose. TBH if they’d been shown a bit of cheese, that was about it.

Planning on making these tomorrow. How crucial is the powdered mustard? I don't have any.
