Venison chops

Pan fry chops a couple of minutes each side to brown.
Remove from pan and add shallots/onion, fry gently 6/7 mins.
Now add a good dollop of redcurrant jelly and 5 gently crushed juniper berries, throw in few peeled and sliced carrots
Now add red wine and a bouquet garni and a little beef stock, simmer for 5 minutes, season and add to the chops in a casserole dish.
Slow cook then remove chops and thicken sauce.

Rowan jelly - far too tart to use for anything else. Be careful you don’t overcook them or they will be dry as they are so lean.

Venison is good for you. Low in fat. Redcurrant jelly is an ideal accompaniment.

I agree. Long slow cooking in a casserole with root veg plus sharp tasting fruit added towards the end. Delicious. Very healthy low fat high protein meat

Perhaps braise them in a rch sauce so that they become like casseroled venison. I do not like lumps of meat and I confess that any lumps of meats become casseroles nd stews one way or the other.

I was just going to say that. Fruit goes so well with venison. My favourite recipe was one with brambles. Very rich. 😋

In a fit of excitement I bought 6 'French' trimmed venison chops from the butcher. They have been in the freezer since.

I have a recipe for a mushroom sauce to go with them but has anyone got any other ideas?

To be honest, I'm not keen on venison generally but thought we should try something different.
