What's for dinner today?

I've just cooked cheesy-breadcrumbed Basa, with sweet potatoes and oven-roasted Mediterranean vegetables. (It's a Gousto recipe I had ages ago) Gorgeous.

Yesterday I made Parmigiana Melanzane a Sophie Grisgson recipe from her new series. I made enough for a large family so will be eating it for a few days with crusty bread.
I like to try different meals otherwise food can be rather mundane.

Update on the quiche. It looked good, but was a bit undercooked. I will re-heat tomorrow and home it firms up a bit. The recipe said 'cook unit set', and it didn't wobble, so I assumed...

How does one know when a quiche is set?

My DH has gone hunting for the week with our sons and grandson, so it's just me and the dog here this week.

I'm doing a bit of fridge clean-out, I have 2 leeks and some fresh spinach, so will make a quiche. I cheated and purchased the pastry crust. It's just past lunch here now, which was chili, with yoghurt and fruit for afters.

We had lunch out today and I had cheese and tomato quiche with chips and side salad whilst DH had steak pie, chips, carrots and cauliflower so just had a snack this evening.

We are having a pan fry - cubed potatoes, chopped onions, bacon, blackpudding, mushrooms, cherry tomatoes and chopped rosemary. Topped with fried eggs.

We were invited to lunch today for the first time by a friend whose husband died a year ago. I think she is early 80s and is making every effort to socialise and also has a part time job.

It was like stepping back in time. It was just perfect. As follows, homemade watercress soup with croutons, beef stroganoff, white fluffy rice, carrots, brocolli and sour cream, followed by homemade lemon mousse with raspberries. Plus a nice glass of red wine. Followed by a decent coffee.

It was better than any meal in a restaurant! I shall write and tell her so.

On Mondays I work from home (remote) and therefore enjoy playing in the kitchen after the quick run to the farmer´s market and fish / meat market.
