I've just cooked cheesy-breadcrumbed Basa, with sweet potatoes and oven-roasted Mediterranean vegetables. (It's a Gousto recipe I had ages ago) Gorgeous.

I made a big pot of chilli three days ago, so we have been eating that each evening but ringing the changes with Jacket potatoes, Rice noodles, chips and garlic bread.
I only realised this morning that I forgot to add the kidney beans!! confused Oh well!!

Today I made a hot and sour pork and vegetables with a steamed rice. I also made some Welsh faggots with home grown beans and potatoes. That’s all ready to cook tomorrow as I have a busy day planned.

We just had new potatoes with mint, fresh runner beans, pork slices in a maple syrup dressing and some of my own fresh cherry tomatoes. Then fresh strawberries with a meringue nest and cream.

I slow cooked a ham on Monday, and we had some of it with veg and new potatoes , last night we had some of it cold with chips and peas, so tonight I’m going to use some of it in a pasta dish with a tomato sauce base. Tomorrow I’m making “piggy pie” - version of shepherds pie, but using the ham instead of lamb. That will see it all used up. 😁

DH is out so one of my favourite snack dinners fish finger sandwich on granary bread with tartare sauce and a big bowl of mixed salad.

Got an elderly neighbour coming for tea who is a veggie. I am just doing new potatoes with mint, big salad with my own homegrown cherry tomatoes, a sals with mango and red peppers and I have bough him a veggie savoury thing.

Following that with stewed rhubarb which is bubbling away.
