Sides for a tagine?

We enjoy tagines and usually have them with just rice and a salad.

What other 'sides' do you serve with them.

Moroccan cauliflower couscous salad. I've been sorting recipes for family weekend meals. This one is quite nice, almonds and chickpeas for protein.

JackyB -Tajine is a pot and a dish - rather like casserole in English .

I love a good lamb and apricot tajine on a cold day when I've been working in the garden .

I had no idea that a tajine was something to eat. I thought it was just a certain kind of pot. That's what I get for living in the diaspora as I do.

It sounds very much like couscous, which is what we call a stew with couscous, based on a dish my DH's Moroccan landlady made when he was a student teacher in France. Can't imagine having any sides with it, as it all went in the pot.

You have given me food for thought! Plenty of mint in the garden, as I like doing Moroccan style food, albeit without so many spices.

If I happen to be near a Waitrose and intend to cook a tagine I'm afraid I often pop in for a Levantine Table Freekeh, Black Rice & Chickpeas "salad". It's really tasty, nice as it is, but can be tarted up with other delights... with halumi, feta, etc and is even good warmed up.
It has spinach cranberries and coriander in it - and sumac so I could easily replicate if I could be bothered!

Toss cauliflower florets in olive oil with some zatar if you like (can par-boil first if short of time) and roast well till browning - serve with a squeeze of lemon and a drizzle of black tahini and a sprinkling of pomegranate seeds. Minty yogurt "dip" goes nicely with this too.

I love lamb tagine with apricots sprinkled with toasted almonds .

I serve it with any of the following -

Flat bread or nan
Rice
Couscous , which is the tradition , but not liked in my family .
Roasted peppers
Minted plain yoghurt with cucumbers , which have had some of their liquid removed . Slice them , sprinkle with salt and leave under a weighted plate until the excess water comes out .
Roast /baked potatoes/potato wedges
Lemon / lime wedges

Red lentil flatbreads are easy to make and gf. They are a bit bland but you can add any flavours you like. Curry powder or toasted seeds (cumin, fennel etc.) would work well.

I like jewelled couscous.
I found a lovely recipe for aubergine which would go well. Pomegranate and harissa roasted aubergines.
You need the following to serve 4.
2 largish aubergines
3 tablespoons of garlic oil (I used olive oil DH doesn't like garlic)
2 tablespoons Rose harissa
2 tablespoons pomegranate molasses
2 tablespoons clear honey
Salt to season.
All you do is peel and halve the aubergines and brush with all the oil. Put on a lined baking tray and roast for 30 minutes. Mix the rest of the ingredients in a bowl, remove cooked aubergines from the oven and spread the harissa mixture over them. Roast for another 10 minutes and serve.
They are delicious.

Irrespective of whether we cook fish or meat in our tagine we always lay it on a bed of suitable vegetables. I thought everyone did this, so I would love to know what you actually mean when you say "tagines". What do yours consist of?

This is typical of what I usually do; other variations include chicken & apricots.

Couscous, quinoa, or rice. Naan or other flatbreads. Potato pakora. Salad (usually carrot, tabbouleh, or fattoush). Tzatziki.

Always couscous or bulgar wheat, yoghurt with toasted almonds on top, spiced chargrilled aubergine slices or an authentic tabbouleh.
