Has anyone got a good one? I used to but have lost it. I'm now using one from an old M &S cookery book which is ok but a bit crumbly

MamGU12 your recipe is one I use all the time and it never fails. I tend to add rum or scotch into mine and nuts. Don’t use loaf tin always line a cake tin. Beautiful in fact my make one this afternoon. It’s my DH’S favourite cake however he eats it too quickly 😂😂

I've been using this one since the 1980's! I don't worry about brands, but include them for interest. 1 cup = 9 fl oz/250ml

It's the from the mother of a friend of a friend.

Gill's Mum's Australian Boiled Fruit Cake

8oz Stork or Echo margarine
1 cup sugar
1 cup water
8-12 oz dried fruit, nuts etc
pinch bicarbonate of soda
1 teaspoon mixed spice (optional)

Put all in a saucepan (chop the margarine), bring slowly to the boil then remove from the heat and allow to cool slightly.

Pour in 2 slightly beaten eggs and mix well. Then add

1 cup self raising flour
1 cup plain flour

and mix well. Put in 2 loaf tins in the centre of the oven at 350F 176C Regulo 4 for 40 minutes - 1 hour

The Katie Stewart boiled fruit cake is delicious and easy to make. Google "cuckfield.org" and it's on their website.

I mug cold tea
3 mugs dried fruit
1 mug brown sugar (original recipe used 2 but it was too sweet)
4oz butter

Put all in a large pan and bring to the boil, boil for 3 minutes and leave to cool

Stir in 2 cups of flour, you may need more, until you get to a dropping consistency.

Cook at 180° for at least half an hour, may take up to 45 minutes
