Boiled fruitcake recipe?

4 ounces each of butter
raisins
sultanas or mixed fruit
castor sugar
1/4 pint of water
Put in a pan and boil for 5 minutes
Then add 8 ounces SR Flour ,2 large eggs ,beaten and 2 level teaspoons of bicarbonate of soda ,mix well .Place in a greased loaf tin and bake at 180 for 45 minutes then reduce heat to 150 for 10 -15 minutes.I sometimes substitute some water for brandy and add a teaspoon of allspice .Its quite versatile and never fails .

We made this for years and measured in cups.
Any size cups as long as it's the same one.

1 cup of milk (or tea)
1 cup of sugar
About 6ozs butter
2 cups of dried mixed fruit as desired
Boil and allow to cool

Add two eggs, beat in
2 cups SR flour fold in
Spice if liked

Bake at 150C Fan for about 45 minutes, test with skewer.

Sorry, it's a bit hit and miss but we just used to throw it together!

BTW, I don’t know if you remember the old fashioned loaf fruit cakes? It’s rather like them in texture and flavour. That’s why I like it so much. In fact, I’m making one tomorrow.

I hope the image will come through. I use a loaf tin. I add a bit more mixed spice than the recipe says and quite often use seeds instead of nuts. I’ve found butter is much the best for flavour but don’t use soft marge.

I’ve also used cinnamon and well chopped apple. I use port or just plain orange juice for the liquid. Marmalade can be a tasty edition instead of some of the fruit.

Has anyone got a good one? I used to but have lost it. I'm now using one from an old M &S cookery book which is ok but a bit crumbly
