I really don’t like the taste of ginger but recently had a bad bout of Covid and lost my appetite but had a real craving for Gingernut biscuits and haven’t lost that craving yet. Weird.

I have a recipe for Chocolate gingercake. Absolutely delish and very moist. Haven't made it in years but when we've finished the rest of the flapjacks, I might dig it out - just to read of course. wink Much prefer a cake with a bit of texture to any kind of "cream cake".

I too would love some gingerbread right now. Here the weather is stormy, wet and cold.

But I simply have neither the time nor the energy to bake right now, so I am looking forward to the shops getting it in!

This is making my mouth water. I love anything spicy and gingery.

Last year I found a recipe for a sticky ginger cake with fresh cranberries. The tartness of the berries really paired well with the sweetness of the cake.

We usually had friends round for Bonfire Night, and my mum made meat and potato pie with sloppy peas, and toffee and ginger parkin for afters. I think the parkin was made with ‘pinhead oats’ - it had quite a gritty texture but it was very syrupy/treacly as well.

I never make any of these, but this thread has whetted my appetite!

One of my Granddaughters hates dried fruit so I try to find recipes without it in them. She does love chocolate though

I have some mixes from Wright's Baking, which I make in the bread maker. Trouble is, they don't last me more than a day...

It's yummy isn't it!

Witzend Mon 16-Oct-23 21:45:37

Redhead, dh and I have scoffed all this. It completely filled the tin before.

Redhead56 Mon 16-Oct-23 18:36:39

This is all your fault Witzend now I have to struggle to eat it!

Redhead56 Mon 16-Oct-23 15:51:39

I would probably start eating the cake today finish it tomorrow and make another on Wednesday.

My Mum used to make a sticky ginger cake regularly; she called it ginger parkin but never put oats in it! Nor did it have any fruit.
It was delicious, I might make one.

I make the gingerbread recipe from the Be-Ro book. I don't put sultanas in either.

For anyone who likes ginger and doesn’t have the time or expertise to bake something (me) Sainsbury do a gorgeous ready made pud (in the chilled desserts aisle) a taste the difference luxury sticky ginger sponge pud.Enough for four, or three if you like quite a lot (me)😄
Just add custard, cream or ice cream, mmmmm.

Me too! I actually bought treacle for the Christmas cake (made today) and golden syrup to make a sticky gingerbread at the same time. I use a bero recipe and don't add fruit to it at all.

lixy Sun 15-Oct-23 14:43:49

Yes, certainly on the to do list next week as the GC are coming to stay for half-term.
I don't put sultanas in but do put chunks of stem ginger sometimes.

Mary Berry recipe for me too, though GC and builders will be here so I don't think it'll last long enough to worry about fitting it into a tin!

dogsmother Sun 15-Oct-23 14:38:15

Yum!
I crave all kinds, my problem is solved by a large bag of organic dates from Amazon ( yes I know) which I dip into probably daily.
I do occasionally make a ginger slab or cherry cake to mix things up a bit though.

Witzend Sun 15-Oct-23 14:09:05

Maybe because it’s gone chilly here today - clear blue sky but cold - I usually make some around Halloween/Bonfire Night, one and a half times an old Mary Berry recipe that just fits one of my tins nicely - and the finished slab just fits into an M&S Christmas shortbread tin.

I don’t add the sultanas though - IMO it doesn’t need them.
Anyone else keen?
Next trip to shops, I need to stock up with golden syrup and black treacle.
