Light fruit cake made with oil

Oh yes, the cake was/ is delicious. It has a slightly crusty exterior, DH says that's the best bit!

I made the fruit cake yesterday - DH and DGS both said it was delicious, and it was so easy to make! I'll definitely be doing it again.

Alice - the link from jax above makes it 142 ml. Not sure the 17ml will make any difference though.

AskAlice, thanks. I made this cake this afternoon, and we will try it tomorrow. It was very easy to make.
Having just finished my Date and Walnut loaf this evening, it's nice to re-fill the cake tin.

Found this. Crazy H..

220g Self-raising flour
2 tsps Baking powder
160ml rapeseed oil
220g Caster sugar
4 large free range eggs
4-6 drops vanilla essence
3 tbsp jam for the filling
Whipped cream (optional)
A sprinkling of icing sugar to serve

Making cakes with oil, you can find recipes for cup cakes that just use oil perhaps use one of them for a cake?

I remember a sponge made with cooking oil, instead of butter. Wish I could find it

As the other ingredients are in Imperial measurements, I would guess that the cups used are UK ones. On my set of cups it says that 1/2 cup is 125ml. Although I'm not a fan of fruit cake, my DH and DGS are so I'm going to give it a go and see how it turns out. I'll report back!

Depends on the cup size.
USA and UK are very different.

Wish all recipe were in metric as that's the same everywhere!

This looks very easy to make - would olive oil be ok to use??

I am with @Curtaintwitcher I am trying to avoid what they are calling Ultra Processed Food, I use butter and only olive oil and avoid processed food that use loads of ingredients.

I always make my own cakes, it was Banana and Cherry Loaf this weekend, and an Apple and Blueberry Crumble for yesterday’s pud because the family were coming for lunch. Both were delicious.
I think I might try that fruit cake Gang.

I have decided that in future I shall make all my own cakes. They will be made with all butter, no trans fats, no preservatives, nothing artificial. Bought cakes often look very tempting but are a disappointment when eaten, and rather alarming when you look at the list of ingredients.

I made this today and it has turned out beautifully fruit evenly distributed throughout and so quick to make! The proof of the cake is when my husband tries it will keep you posted.
I also added a teaspoon of mixed spices and a half tsp baking powder too. Thank you whoever posted this 💕
