South African chutney chicken

That sounds really nice. And different. Was it quite dry or saucy?

Tried this the other day and it was v nice as well as quick and easy to prep, so thought I’d post it here.

Serves four - I made half for me and dh.

1 tbsp olive oil
1 small onion, finely chopped
1 garlic clove, finely chopped
1 red chilli, deseeded and finely chopped (I used chilli paste instead)
6 tbsp mango chutney
1 tbsp Worcester sauce
6 tbsp mayonnaise
8 chicken thighs - recipe says skin on and bone in, but I used skinless and boneless and they were fine.

Heat oven to 200c/180 fan.
Heat the oil, cook the onion, garlic and chilli for a few mins until softened. Stir in the chutney, Worcs. Sauce and mayonnaise.

Spoon over the chicken pieces (pref on a foil lined baking tray) roast in the oven for 40-45 mins until cooked through and sticky.
We had it with jacket potatoes and salad.
