Cheese scones -how much cheese?

I'm not a fan. Make often for children using 100+ g sharp cheddar.

I always use 100gms of extra mature cheddar, and a teaspoon of mustard powder (this is a must). Chopped chives too sometimes.

Thanks for all your input. I went with 100 g mature cheddar and I added 1tsp mustard powder as suggested by Minimoon. They were perfect! I honestly don’t see how 25g would have given enough cheesy flavour.

My family like mature cheeses too Hetty - but still I'm afraid I use a lot.

I think the cheese scone I once had in a NT cafe might perhaps have been shown a bit of cheese - at a safe distance. 🙁

I don't eat cheese - but I make them for others. I'm sure it depends upon how strong/mature the cheese is. My lot like the very mature sort - lots of flavour from a smaller amount, with less fat.

Personally, the more and stronger the cheese the better.

My thoughts too... and some mustard.
Also, more cheese to sprinkle on the top!

My very old recipe has 8 oz of flour and 4oz of cheese. I use mature cheddar and sprinkle grated red Leicester on top.

An independent cafe in Durham, Vennels, makes a Stilton scone with crumbled Stilton baked on top.
Delicious.

Personally, the more and stronger the cheese the better.

I don't think you taste 25g of cheese. I put 75g in the last scones I made and my DH said they needed more. He will buy mild cheddar though, scones need good strong cheese. I also put a teaspoon of mustard powder in mine,

They sound lovely! no point having a cheese scone if you can’t taste the cheese. I paid £2.50 for one in a cafe yesterday and it crumbled as you touched it, hardly tasted of cheese and came with rock hard butter. Normally I would complain but she had just swapped it for a sausage roll which was like biting on a lump of fat as she had overheated it in the microwave. 🤮

Have never made any but less is more if the cheese scone I had out in a cafe last week is anything to go by.It was sickening it was so cheesy.

Mary Berry - always my go to for baking - uses 125g sharp Cheddar.
