What is for brunch or lunch ?

28 / 11. Tuesday.

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

Calli, I usually make kedgeree with smoked salmon - it's delicious. And considerably easier that last night's recipe.

GF breadcrumbed chicken breast with oven chips and coleslaw tonight.

I think that whatever you call it - cilantro, coriander- it's the work of the devil. It tastes like soap to me.

Coriander is coriander but cilantro in America I believe.

If Mary, Delia, Jamie, Rick, Felicity et al call it coriander then that's good enough for me.

I get confused enough with zucchini and eggplants when we're in Australia.
In Australia, coriander is also the preferred word for the plant, following the European standard. In the United States and South and Central America, cilantro is the word used for the leaves, while coriander generally refers to the seeds

I can't seem to grow it in the garden.

Well, our kedgeree wasn't worth the effort. Though it had coriander seeds, chopped stalks and leaves amongst lots of other ingredients.

I do like kedgeree but usually make it with smoked haddock, parsley etc and rather a lot of butter. DH isn't so keen so we haven't had it for quite some time.

I wanted to say, if you do not care for salmon, try the recipe with perch or haddock or cod ..

Comes out quite lovely too and ingredients are very flexible.

Off for a light bite at our corner tapas bar .. and a short walk with our Frenchie Bull Dog.

Surely cilantro is what we call coriander in English?

To my knowledge:

Coriander is Dry Cilantro ..

The fresh herb is Cilantro and it is Mexican historically ..

Coriander/Cilantro, I think the UK are unusual as we use the name Coriander for both the fresh plant and the seeds, in many other countries, Cilantro is fresh, Coriander the dried seeds.

Arabic: كُزْبَرَة
Brazilian Portuguese: coentro.
Chinese: 芫荽
Croatian: korijandar.
Czech: koriandr.
Danish: koriander.
Dutch: koriander.
European Spanish: cilantro.

I've never had or made with any mince (even pre-vegan). I have always disliked mince and was/am delighted to use recipes without.

Meanwhile, Mexican was dinner, with fresh cilantro.

We are having smoked mackeral kedgeree. Recipe ripped out of one of the Sunday supplements. Wish me luck.

M&S do a good stirfry, separate packets, chicken, beef or prawns, different veg, different noodles (we like Singapore) and you can choose different sauces.

We had salmon cooked in foil last night, with noodles and stir fry. I love the fact that a healthy meal is popular with both of us.

Tonight it’s Cajun chicken with jackets and probably stir fry again.
Home made stir fry is filling and means I’m eating lots of different things (but no grated carrot!)

Wednesday ..

10th July 2024 ..

Due to the high heat, we are having a low hassle lunch:

Blackened Salmon ( the "cola" which is the back end, not steak format ) ..

The ingredients for this moist, slightly spicy perfectly balanced dish are:

Papaya & Mango (fresh) peeled and sliced - 1 / 2 cup
2 tblsps red onion
2 tblespoons of fresh squeezed orange juice
1 tablsp fresh lime juice
1 tablsp fresh cilantro - can sub parsley if you wish
1 1/2 tablsps of fresh spearmint leaves
paprika to taste
2 tblsps black pepper grinded from peppercorns
2 tablsps of white pepper corns grinded
1 tablsp of ground Mustard
2 tiny cayenne dried red peppers ( called guindillas )
2 teaspoons of dried thyme
Extra virgin hojiblanca Olive Oil ( very light olive oil )
Prepared in a skillet ..

Marinate for approx 30 minutes and then cook the seasoning ingredients in the skillet to form a crust approx 3 to 4 minutes.

Then add the salmon flesh side down into the spice mixture.

In approx 4 to 5 minutes, the medium rare salmon shall be ready.

Serve with a light salad or fresh steamed broccoli ..
