What is for brunch or lunch ?

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

Linguini Vongole ( clams ) ..

A simple salad, rocket, radicchio, fennel and tomato with a vinaigrette of Evoo & Balsamic Modena Vinegar ..

Later we shall have a small cheese and fruit board ..

A very simple lovely lunch ..

Grilled Fresh Ecological Norwegian Salmon Teriyaki ..

A side of fresh baby Spinach.

Of course a Parisian style oven warmed baguette ..

6th May 2025 - Tuesday.

The catch of the day was fresh salmon colored trout at our Fish Monger´s .. Oh, so lovely.

The salad was fennel, assorted lettuce types, tomato, strips of red bell, black olives and Feta Cheese ..

Of course, balsamic Modena, Italian vinagre and Evoo from Jaén, Spain.

02 / 05 / 20225 - Friday.

We had thunderstorms most of the day, so I had to prepare lunch at home. We even had "granizos" ( ice balls ), lightning, high winds and thunder !

Lunch was a simple Pasta ( linguini ) with a home made Marinara sauce ..

And a simple baby spinach salad, radicchio ( red chichory) with fresh tomato and fennel .. and a home made Evoo and Balsamic Dressing.

Simple however, lovely.

Roast Chicken breasts with mini veggies roasted ..

30th April, 2025 - Wednesday ..

Today lunch was baked freshly caught Trout ( salmon color ) topped with a little garlic, Extra virgin olive oil, fresh dill and fresh parsley.

Side: A baked Jack .. Served with French butter and Mojo Picon Verde ( A Canarian green type mayonaise consistancy but not mayonaise and garlic combo with herbs ) ..

Lovely lunch ..

Saturday the 26th of April 2025 ..

Today was a gorgeous day and so we headed over to our favourite Pizza Place, Fratelli Brothers (from Napoli) for pizza with our dear friends.

We walked all the way home and just had a lovely day.

Monday - the 21st of April 2025 ..

Today was the 1st sunny day with blue skies in over a week.

Lunch was a simple hummus with toasted pita ..

The main: Homemade baked stuffed red bells filled with rice and currants ..

Simply splendidly wonderful.

Ingredients:

Evoo
onion
pinenuts
long grain white rice
San Marzano tinned tomatoes (purée)
fresh dill herb
fresh mint herb
salt
black pepper freshly ground
allspice

Wishing everyone a very Happy Easter Sunday.

Today we dined at my sister in law. She prepared a roast leg of lamb which was a jewel of a traditional dish. The starter was a beautiful salad with:

red chichory, rocket, cherry tomatoes, fennel, peeled cucumber, strips of red bell and a gorgeous vinaigrette with Balsamic vinegar and Evoo ..

Dessert: Torrijas ( the best way to describe a torrija is to say it is like a "French Toast" however, it is prepared with a special type of Spanish bread and sweet white wine (verses butter) and sugar glace & cinammon.

Sunday: the 19th of April, 2025 ..

Today was one of the coldest and windiest days we have had since January.

Totally unpleasant.

We did the last minute shopping (supermarket / bakery/ farmer´s market ) close by ..

Today´s lunch was simple: Seared Entrecôte rare served with a baked Jack ..

A glass of red Reserva from Marqués de Murrieta, La Rioja and an oven heated Baguette ..

That was all for the moment.

Today, the 15th of April, 2025 - Tuesday:

Golden braised roast chicken with rosemary ..

Dessert today: Zabaglione with Vino Santo ( or Marsala ).

Very simple: 5 egg yolks, sugar to taste and 1/4 cup of Marsala or Vin Santo ..

09 / 04 / 2025 - Wednesday. Lunch Today:

Insalata di Rucola e Pere con Asiago = Rocket, pear and Asiago Italian cheese. Balsamic Vinegar from Modena and Extra virgin olive oil .. Served with Oven warm baguette.

The main dish was: Pollo alla Marengo
(Chicken Stew with tomatoes, onion, garlic and white cap mushrooms) ..

Monday is usually our Pasta Day.

So, today is Agnolotti with basil butter ..

Our salad was simply fresh fennel bulb, red chichory ( Radicchio ) and Rocket with a a light Balsamic Vinegar and Extra virgin olive oil.

Served with an oven warmed Baguette from the Bakery.

Saturday the 5th of April 2025 ..

Today we had gilt bream ( Dorada in Spanish ) con tapenade. The ingredients are: Garlic, Kalmata olives, capers, thyme, milk, butter, nutmeg and rosemary, salt and black freshly ground pepper.

Served with steamed tiny potatoes.

Was quite good .. The recipe was from a previous edition HOLA Magazine and looked so lovely - I asked if I could have the recipe at my hairdresser´s ..

Wednesday - the 2nd of April, 2025 ..

Lunch today was Homemade Tortellini filled with Ricotta and prepared with a home made tomato sauce ..

A very simple dish though one requires quite a bit of patience with preparing the pasta dough.

However, one can also purchase RANA frozen tortellini in all major supermarkets ..

Served with a small salad of Arugula ( rocket ) and Radicchio ( red chichory) with cherry tomatoes and Balsamic vinegar and extra virgin olive oil.

Today my husband and I, and 2 dear dear friends headed over to have our favourite Pizza at Fratelli Brothers ..

Such a gorgeous day that we walked home and enjoyed window shopping, a café on a terrace and also stopped to pick up some cheeses enroute for a cheese platter (for Sunday).

The main course for lunch today was Salmon Teriyaki and it was served with Basmati Rice ..

There was no starter as both of us, wanted a little sweet tooth pleasure !

A Mango Mousse hit the spot !
