28 / 11. Tuesday.

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

I had tomato soup and ice-cream with raspberry sauce for my lunch, I had chicken Kiev, roast potatoes done in the air fryer and asparagus for my dinner it’s no wonder I’m putting the weight on - must be careful

Brunch at home offers such a cozy vibe.
Eggs Benedict with different toppings, Eggs Florentine for a healthier option and French toast for a sweet treat... all great choices!

Lunch today was a Caesar Salad without poultry / chicken ..

The main was a Spanish wild cod fish recipe called:

Bacalaó al ajoarriero .. Which is;

Cod fish, onion, green bell, garlic, choricero which is a dried pepper, tomato sauce from scratch, Extra virgin olive oil, a chili pepper (dried called a guindilla) and cod broth baked in the oven.

Was wonderful. The fish was very fresh and truly exquisite.

No dessert.

We had a lovely Prosecco to pair with.

Today I prepared a dish of Chicken Cous Cous with fresh vegetables. Turned out wonderful ..

Saturday: 15 / 06 / 2024 ..
Lunch:
Prepared a Zuppa di Pesce, a shellfish and fish stew with tomatoes de-seeded and peeled, Extra virgin olive oil, garlic, leek, shallot, dry white wine, sea bass, northern haddock and fresh cod with mussels and clams. Prepared in a Dutch Oven, stove top.

A lovely Cambados Albariño Pazo de Señorans and fruits with cheese assortment for dessert ..

Sunday: 16 / 06 ..

Lunch:
Today, I prepared homemade Moussaka with green bell peppers, ground beef, dry red wine, tomato paste, Italian style tinned tomatoes San Marzano, onion, extra virgin olive oil, paprika, a pinch of nutmeg and aubergines.
Turned out lovely.

The wine was a Greek Rosé from Crete - very refreshing.

Dessert: Greek yogurt with fresh fruits - strawberries and blue berries and peaches.

Thursday: 13 / 06 / 2024 ..

Today we had shared a very interesting salad out, and the ingredients included were:

Blueberries, algae, black cabbage, beet root and salmon .. Quite a contemporary pleasantry ..

Rich in anti oxidants and minerals, the salmon was grilled ever so slightly and had a orange drizzle, not a full sauce however, just a drizzle which created a lovely palate experience ..

Our starter was freshly grilled large prawns de-shelled and de-veined and served with 3 dipping salsas:

Black Olive
Tartar with Fresh Dill
A lightly piquant chili dip

Wine was a simple Prosecco Rose.

Dessert: We shared a lite version of a cheesecake with strawberries on top. Lite and polished off the meal with an Earl Grey.

Today was Lentils soaked overnight with a wide variety of finely chopped vegetables ..

Simply a true classic traditional dish that is highly pleasant.

Monday: 10 / 06 / 2024 ..

Our lunch today is Risotto Primavera with artichokes, lemon, chicken stock, Extra virgin olive oil, celery, leek, carnaroli rice, green beans, tomatoes peeled and de-seeded, carrot, fresh green asparagus, unsalted Asturian butter, fresh ground pepper, salt and freshly grated Parmesan.

Serving with: A Rosé from Navarra - Julian Chivite ..

Dessert: Zabaglione with Vin Santo
This is a simple egg yolk preparation with sugar to taste and a 1/3 cup of Marsala Wine or Vin Santo (sweet wine of choice). Served warm into goblets with biscotti.

Saturday: 08 / 06 / 2024 ..

Lunch today was:

Starter: Fennel soup prepared with leek, red potato, fennel bulbs, crème fraiche and orange zest grated.

Main: Roasted chicken with Dijon sauce was the main course.
Served with Haricot French style green beans.

Dessert:

Quick fresh strawberry charlotte ..

Earl Grey / Café Espresso.

Wine today: Pouilly Fuissè Chardonnay.

A nicely balanced salmon with a tropical fruit salsa, grilled.

Mango
A small Papaya
A tiny bit of red onion
Fresh squeezed orange juice
A little of fresh spearmint herb
White pepper
Paprika ( pimentón )
Thyme Herb
Salt To Taste

Heat skillet with 3 tablespoons of Extra virgin olive oil and grill salmon on high heat - 2 minutes per side. The herbs and spices shall create a crust.

Serve the fruit salsa on side or drizzle lightly on the salmon ..

Sip with a Sparkling rose or white wine.

Today we lunched on our terrace ..

A warm endive salad with fresh lemon, endive, Extra virgin olive oil, white cap mushrooms, fresh parsley and shredded carrot .. Salt and black pepper ground ..

The main was a golden braised chicken with rosemary sprigs and garlic, dry white wine, tomato paste, chicken stock strained and placed in my Le Creuset Dutch Oven over medium heat.

Turned out lovely.

Monday: 03 / 06 / 2024 ..

Remote work day so time to prepare lunch for the two of us.

1st course: An artful Antipasto salad .. and homemade Vinaigrette ..

Main course: Grilled whole fish - Gilt bream called "Dorada" in Spain, a lovely blue fish .. with fresh parsley chopped finely, Extra virgin olive oil, fresh thyme, fresh coarse breadcrumbs and egg for the breading.

Dessert: Fresh seasonal fruits: Strawberries, cherries, red apple and 3 different cheeses, a Spanish, a French and an Italian .. 1 Goat cheese, 1 cow cheese and 1 sheep cheese.

Also served with a bakery bread .. we enjoy dipping in a little Extra virgin olive oil sprinkled with salt.

Saturday ( the 1st of June ):

Today, my husband and I, went out for Napoletano Style Italian Pizza at Fratelli Brothers, who won the best pizza award outside of Italy in 2021.

The Margherita is a gem of a pizza. Truly delicious.

Thursday .. 30 / 05 / 2024 ..

Today, we ventured to a local neighbourhood terrace bar and restaurant, as the tables all had sun umbrellas so it was quite comfortable.

Lunch:

Tender, melt in one´s mouth Galician Baby Octopus served on a wooden board with Extra virgin olive oil, smoked paprika and boiled tender cachellos ( yellow potato from Galicia) and sprinkled with sea salt ..

An Albariño White Wine from Martin Codax - O´Rosal.

Perfect lunch ..

Room for desset: Fresh Spanish (Huelva) ripe strawberries !

Today, Asparagus Risotto was our main today accompanied by a lite lovely Caesar Salad (no chicken) ..

Wine: A Rosé Prosecco.

Sat on our terrace and enjoyed the lovely weather.

Tuesday: 28th May 2024 ..

Today, I prepared a Baked aubergine with tomato sauce from scratch and Reggiano Parmigiano Cheese (Parmesan). This recipe hails from Lecce, Puglia and is called
MELANZANIE DI LECCE.

It is similar to a lasagne except it is not prepared with Pasta. The layers are aubergine.

Served with a tiny tri color leaf salad, cherry tomatoes and a lite vinegarette.

Shall be ready for 14.00 our time in Madrid and for dessert, assorted fruits.

Wine: Prosecco Rosé.

Sunday: 26 / 05 / 2024 ..

My husband and I went out for Brunch today.

We truly enjoyed the lovely weather ( 23 degrees centig.)

We shared an array of lovely pastries including a Bûche (rectangular pastry) Charlotte of citron vert (lime) and rasberries ..

Then my husband had Crêpes with fresh strawberries and I had my usual Smoked Salmon - Eggs Benedict ..

We had a glass of Cava included with the brunch and then after brunch, Espresso .. And a bottle of Perrier, Sparkling Water.

We walked home and enjoyed the crisp early morning and mid day.
