What is for brunch or lunch ?

28 / 11. Tuesday.

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

Some wonderful ideas on here!

Brunch was cheesy scrambled eggs on wholemeal toast, raspberry and cranberry yoghurt with pomegranate seeds stirred through. Just enough.

Tonight's dinner is air fryer salmon fillets with rainbow 🌈( red and yellow peppers, cucumber, red onions, spring onions, chopped very small) couscous, chilled glass of sauvignon blanc.
No meat today. 🥰

Today I met up with an old co worker dear friend of many years and we went to: Saona, a 30 year old Valencian restaurant which has 2 franchises in Madrid.

We shared a few various dishes that were very lovely. The spiced orange duck was divine. The cuisine is a fusion of Mediterranean and Asian. Quite a lovely change of pace every once in awhile.

My dear husband went out with his colleagues as well.

22 / 02. Thursday.

Today due to drop in temperatures and gusty winds, we had a Polenta traditional dish with fontina cheese and some mushrooms (white caps) ..

Ingredients included:
Extra virgin olive oil
Yellow organic cornmeal (polenta)
Asturian butter
freshly grated aged Parmesano
Fontina cheese
Freshly ground black pepper
Salt to taste
Mushrooms
3 garlic cloves thinly sliced
2 tablsps of fresh parsley

The wine was a red Barolo which pairs very nicely with the polenta.

spinach with ricotta caneloni, frozen, from lidl, zapped in the microwave, with an extra page of mild cheddar added after cooking.

Just had two crumpets with pineapple jam and a banana. Blackcurrant yogurt to follow. Yum, thank you for all the lovely tasty ideas. Cauliflower cheese, jacket potato and salad.

I bought some Bonne Maman blackberry and raspberry yogurt last week, never seen it before. It is delicious!

Kippers - I get an urge every now and then.

Oh goodness, we haven't had kippers for a long time. I banned DH from grilling them indoors and made him do them outside on the BBQ grin

It all sounds like a lot of hard work (except the crumpets)😅 im ill so im gonna have the curry& rice i saved from last nights takeaway(saved half in containers in fridge)- bought to see if a curry would help sweat the cold/flu out, also as i felt too ill to cook.

Homemade leek and potato soup, homemade walnut and flaxseed bread with a bit of cheese on. Bread and soup made by DH.

21 / 02. Wednesday.

Lunch today ..

Grilled Citrus Salmon is the main course.

Fresh orange zest
Fresh squeezed orange juice
Reduced sodium Kikkoman Japanese soy sauce
Fresh salmon
Extra virgin olive oil
scallions or leek
a little minced garlic
Himalyan rose salt - very light sprinkle
Fresh spinach leaves for the "bed" to place the salmon
1 tablesp of rice vinegar

Definitely healthy as well as flavourful and lovely.

Served with a bottle of Pazo Senorans Albariño white wine.

Starter: Hummus Classic Style with Soaked overnight Chickpeas and Tahini .. And Pita toasted.

Monday.

Lunch today was Entrecôte Bernaise .. My family recipe for Bernaise is:

Dry white wine - 1/ 3 cup
White wine vinegar - 1/ 4 cup
Finely chopped shallots (2)
2 Tablesps. chopped fresh Tarragon Herb (can use dry)
3 Large egg yolks
1 stick of unsalted butter
1/2 tsp. fresh lemon juice

I use the whites of eggs for a French Omelette.

I had my roast dinner slammed down on the table for me, as usual on a Sunday.
(The slamming down isn't usual, but things are tense)
Luckily, it didnt affect my appetite

Lunch today:
POULET PROVENÇAL ..
In earthenware, we had braised chicken with olives and tomatoes, fennel, onion and Herbes de Provençe ..
A classic dish featuring Extra virgin olive oil, herbs and produce that is a one dish lunch which transports one to Southern France served with a a baguette from the Parisian Bakery and a beautiful red wine from Rhone Alps (Bourgnon Region) ..

Dessert:

Calvados apple brandy with a home made apple pie using Reineta, Granny Smith and Red Gala apples ..
