This isn't just for my recipes but people have asked for them. I am disabled and love cooking and baking but have made recipes easy.
Anyone who has an easy recipe for anything please post. This is a site for everyone.
teabagwoman I always try and find a way to do things I want but my way. Today made 7.5lbs of Seville orange marmalade but my way. Doesn't look like marmalade you buy but it tastes brilliant. Blowing my own 🎺. But friends love it and making it my way it makes perfect marmalade cake or marmalade lemon drizzle hybrid.
Lemon drizzle is a family favourite here but I’d given up making it because I can’t see where I’ve grated the lemon and where I haven’t. Great to know that there’s an alternative, Whiff.
Witzend I use that recipe it always turns out perfect. I sometimes add dried blueberries,cherries or cranberries. Or choc drops.
Elegran that's a niffy idea . Never thought of doing it that way but it makes sense.
Wanted to make lemon drizzle cake. But can't use a grater anymore. So annoying I could a few months ago but not now . So I made my marmalade cake using my lemon marmalade . As I always have bottled lemon juice in mixed it with demerara sugar after pricking the hot cake spooned over the cake. And it worked perfectly. All ready for my craft group tomorrow.
Has anyone got an egg less gluten free cake recipe?
About cheesecake - I haven't made one for years, but I always used to make them upside-down then turn them out the right way up. I put the topping first into a lightly oiled loose-based cake tin, then addd the cheesecake layer, and finally the crumb base.
I lined the loose base first with a circle of greaseproof paper, or in clingfilm, so the topping didn't all stick to the tin base. To serve I would loosen the crumb layer round the edges with a knife or spatula, invert a big plate over the top , and turn it all over so that the cheesecake would land on the plate, though sometimes the tin base needed a push to release it.
Oat biscuits, very quick, easy and moreish. Good for making with Gdcs.
75g/3 Oz each of oats, SR flour, sugar, butter
1 tbsp each golden syrup and milk
It’s not in the recipe but I add some grated lemon rind if available.
Preheat oven to 180/160 fan. Line a baking tray with baking paper.
Mix oats, sugar and flour in a bowl.
Melt butter with syrup and milk in a pan. Add to dry ingredients, mix well.
Put in well-spaced roundish dollops on baking paper and tidy up - they will spread.
Bake for around 10 mins. They should still be soft-ish when taken out - will firm up on cooling but still nice and chewy.
After 5 mins transfer to a wire rack to cool.

My gluten free cake was a hit with my friend who can't have gluten . She took 3 pieces home with her. It tasted great but the texture was spongy. I will make marmalade cake again but use my recipe with gluten free flour and baking powder. And add milk as I know it needs more liquid as the flour absorbs it .
Any way here is the recipe
Gluten free marmalade cake
175g spread or butter
3 tablespoons heaped of marmalade
150g pot natural yoghurt
3 med eggs
175g white granulated sugar
200g gluten free SR flour
Half teaspoon level of gluten free baking powder.
Oven 160° fan
Lined 2lb loaf tin
Put all the ingredients into a bowl and whisk with electric mixer.
Pour into lined tin.
Cook 60-70 mins
After 45 mins it was browning so covered it with foil and cooked for further 15 mins until skewer came out clean.
Put on cooling rack in tin.
Took out of the tin after a hour .
My friend loved it because when she goes into a cafe can only have flapjack.
Will make a Parkin using gluten free flour and see how it turns out.

Whiff, I made your marmalade rocks, using my leftover lime marmalade, ready for a meeting of my discussion group, and they’re delicious. It’s nice to be able to offer people something different.

Madgran I have your recipe in my recipe book. And will be making one for my craft group at Easter. Long way off but time flies. Made my first gluten free cake it's marmalade. I will post the recipe if my crafty friend likes it . Normally she can't have my cakes or biscuits. So I give her jars of my preserves . It sank a bit in the middle think that was because of the yoghurt in it.

Cheesecake an absolute favourite for me Whiff. You can use my recipe for any flavour really - lemon; strawberry; vanilla; orange; etc I love baked cheesecakes too 😋
This is for any left over risotto. My daughter said what's that as they never had left over.
But I always made double the quality of risotto when I used to make it. Vegetable or just mushroom or plain risotto works well.
Cool left over risotto in a rectangle or square dish lined with cling film with over hang. Leave over night in the fridge.
1 egg beaten
Plain flour
Breadcrumbs I used the natural ones but use what you like.
Oil not virgin olive oil but what you have in ordinary olive oil, rape seed , sunflower or vegetable.
Lift the set risotto out of dish and cut into size portion you want. It will be soft to handle .
Flour ,egg and breadcrumb it.
Put little oil in pan and fry each side until just coloured.
Place on baking tray lined with baking paper put in oven 200°c . Bake until crisp and piping hot 20-25 mins.
Depending how much risotto you are using may need extra egg,flour and breadcrumbs.
I used to just eat them for my dinner but could be used as a side dish
teabagwoman lovely recipe love the idea of using it to make mince pies better than normal short crust.
I can't have coffee as it gives me palpitations. So this is my Tiramisu.
Raspberry Tiramisu.
100ml white wine or orange juice.
400g raspberries
Packet of sponge fingers
500g mascarpone
3 eggs separated
3 tablespoons sugar use icing sugar but if you haven't got it it works just as well with white granulated sugar.
20ml double cream or Greek yogurt
Dip biscuits in wine or orange juice and fit snugly into a dish . I use rectangular dish. Pour over any remaining liquid.
Scatter with half the raspberries.
Whisk egg whites until stiff with electric mixer .I do this first then no need to clean the beaters.
Beat mascarpone ,egg yolks and sugar with mixer.
Fold egg whites into the mascarpone mixture .
Spread over the sponges.
Whip double cream until thick but not stiff if using. Spread it or yogurt over the mascarpone mixture.
Scatter on rest of raspberries. Cover with cling film and leave over night in the fridge.
It's best if left overnight but if you want it that day then 4 hours in the fridge .
My food processor shortbread.
225g butter (softened)
115g icing sugar
225g plain flour
115g rice flour
caster sugar to dredge.
Put both flours and the icing sugar in the food processor and pulse several times to mix them.
Add the softened butter in pieces. Pulse a couple of times to chop the butter into smaller pieces then run the processor, stopping to scrape down the sides and floor of the processor from time to time, until the dough comes together. This generally takes me a couple of minutes or so.
Either well grease a 9x13" baking tray or line it with baking parchment.
Break off small pieces of the dough and put on the tray. Press down to cover the tray and then roll over the top to even it out. I use a drinking glass. Prick all over.
I bake at 130, in my fan oven, for about 40 min until pale golden. Dredge the baked shortbread with caster sugar, and mark into fingers. Leave to cool for 10 min before moving the fingers onto a cooling rack.
This is very quick to make which is just as well as I've had to make several batches over the Christmas period. I also use this mix to make mince pies rather than using pastry. They are a bit of a faff to make as the dough is so soft and best made in shallow bun tins, the sort we used to make jam tarts in, but they are melt in the mouth.

My made up cheesecake recipe....alcoholic if want it to be
Biscuit crust:
*Packet ginger biscuits, crumbed, mixed with 2ozs melted butter - pressed into base of springform tin lined with foil. Refrigerate
*50 grams full fat cream cheese. whisked with 300ml creme fraiche
Add 3 dessert spoons icing sugar and 1 teaspoon almond essence. Whisk well
*Add 2 tablespoons Amaretti liqueur and whisk
*Spoon on top of biscuit crust. Refrigerate
*Simmer a full bag of frozen stoned cherries in 2 tablespoons Amaretti liquor and 2 teaspoons almond essence. Mix 1 1/2 teaspoons cornflour with some of cherry liquid then add to cherries. Stir until thickens over low heat.. Leave to cool
*Spoon on top of cheesecake when cool and refrigerate at least 2 hours before serving
If you want non alcoholic replace all Amaretti with extra almond essence to taste.

Happy Christmas Whiff and thank you for getting me baking again. When life calms down a bit I’ll post my food processor shortbread recipe. One of the reasons I’m up to my ears at the moment is that I have to keep baking more of it as it’s being eaten so quickly!
My brother does a brilliant cheesecake. He made it up so as soon as I get the recipe will post it. It's a non bake one . He always makes for me when I visit .

Bombay potatoes
1lb new potatoes ( I just used small Maris piper) cut into 4
Teaspoon of Turmeric
4 teaspoon of vegetable, sunflower or rape seed ( not olive not oil )
2-3 dried chillies if liked ( I didn't use)
2 onions diced
Half teaspoon of the following.
Cumin seeds
Mustard seeds
Onion seeds
Fennel seeds
Lemon juice to taste( don't use if you don't want to. I used it if I had any in)
Boil the potatoes with tumeric for 10-15 until cooked but not falling apart. Drain .
Cook onion in oil over medium heat stirring until onions soft and lightly brown .
Lower the heat add spices and cook stirring until seeds start to release their aroma be careful as they may pop and spit add the potatoes and cook for 5 mins stirring all the time until potatoes are heated and coated in onions and seeds. Turn off the heat add lemon to taste if using .

Onion Bhajias
8oz P flour what I used ( or gram if you have it in . Gram flour is made from chickpeas so would be ideal for anyone gluten free)
Half teaspoon chilli powder I didn't use ( if you like chilli use whatever strength you like)
Half teaspoon of the following
Fennel seeds
Cumin seeds
Onion seeds
Teaspoon of following
Turmeric
Baking powder ( gluten free can be used with gram flour)
Dried coriander leaf
2 large onions diced
Cold water
Vegetable oil,sunflower or rape seed (don't use olive oil waste of money)
Mix all ingredients together add enough water little at a time to make a stiff but slightly dropping consistency .
Fry over a medium heat until brown each side and cooked in the middle in batches .Drain on kitchen roll. And cover with foil to keep warm.
Freeze well
Can be reheated in the oven for 10 mins in the oven at 200°.
teabagwoman glad people liked them . Had my craft Christmas party yesterday. Everything I took went . One of our members brought her 18 month old grandson he couldn't eat my gingerbread cake fast enough. Thought it might be to spicy for him but he loved it. I had made it with dark brown sugar this time and added a richer flavour. But I like both using the light or dark brown sugar.
Everyone brought something in . Most was brought but 2 had made coconut pyramids and cheese straws the other a Jamaican rum cake which I couldn't try as alcohol doesn't mix with my tablets and the alcohol wouldn't have been burnt off.
