Curried parsnip soup

There was an entire bag of parsnips that needed using up, so I made some earlier, and we just had it after a cold, windy walk.

It’s so easy, and lovely and warming. You just fry some chopped onion gently for a few minutes, add curry powder, gently fry a bit more, add water (not too much) chicken or veg stock cubes, parsnips peeled and cut into rough chunks, I add a potato or two, too

Simmer until all soft, which doesn’t take long - blitz in the pan, taste and adjust seasoning.
We had ours with mini naan breads out of the freezer.

V easy with a soup maker, too.

I used my parsnips with bacon, onion and chestnuts to make a soup. It was delicious

I love Spiced Parsnip soup. It's nice with apple as well.
Today I made Yellow Split Pea soup, with the stock from cooking a small piece of gammon. Salty, but lovely.

One of my favourite soups. It also reminds me of a very dear friend who died suddenly almost two years ago. She used to make curried parsnip soup. smile
