Some "chain" restaurants better than others in the same chain.

I admit I don't generally use "chain" restaurants but had a really lovely meal in The Black Swan in Henley so was pleased to see there was a new one in this Heartwood Inns chain and went last night... what a disappointment. Perfectly fine but not nearly as good. If you are cooking the same menu, is it just the Chef? I'd assumed much if not all of it was cooked in the pub/restaurant so can't see what else it can be really. Is it that they ^aren't cooked in the pub and they are getting deliveries of batch-cooked foods from different suppliers?

Anyone else found this?

Any restaurant whether it be a chain or a stand alone is only as good as the ingredients and the chef on the day.

I meet up with other GN members at a local chain pub for lunch, there is one closer to me but I will not cross its door due to appalling food, customer service and much more.

We used a Wetherspoons local to us a couple of times.
Very disappointed in it.
Another has opened about4 miles away and is apparently so much better.
I haven't been and probably won't but it just shows they aren't standard.
It is like the long ago days of the Berni Inns.
Some were great others not so.

It is the same as meals from your own kitchen, a successful meal one day can be different when cooked another time or by someone else using the same ingredients.

I suppose it's odd as ^all three courses for four of us were extremely good at The Black Swan yet both courses (three people eating) at the other were very ordinary - so we didn't even try the puddings.

The first time we were with a "fussier" couple too! We all agreed that the food was good.

The answer lies mainly with the kitchen but the Manager of the establishment has a huge bearing on it too. Managers of chain pubs draw a salary, unlike licensees whose livelihoods depend on the profits. It pays a licensee to maintain high standards whereas a manager can still draw a salary whilst putting in less care and effort if he's that way inclined.

Well the manager of this one used to work in a very upmarket place. I've dealt with him re a big family celebration at the other - so that's odd.
Maybe he is just worn out!

In some cases, chain restaurants do have centralized kitchens where certain items are prepared and then distributed to individual locations. This can help maintain consistency across multiple sites, but it doesn't guarantee identical quality everywhere. Differences in preparation, handling, or even the timing of when ingredients are used can impact the final result.

Our local Wetherspoons is excellent. Good food and lovely staff. It’s always busy. We visited one in another area and it had run out of food - very early evening! Their only offerings were a pizza or burger, with no salad or sides!

You don’t go to Wetherspoons with high expectations, maybe it will be good maybe not, you go because it’s cheap, whether the other clientele are to your liking is another uncertainty.

When beer is half the price of other prices it does encourage noisy drinkers, the last one we went to had a bouncer on the door.

Sometimes you do go to a restaurant when it’s the “chefs night off”. If we eat out we only go to one local restaurant it’s full at weekends so we go Wednesday or Thursday busy but comfortable.

When I worked in the catering arena the head chefs always told me to plump for the specials board as this was where they were able to indulge their talents on a daily basis as opposed to the regular menu which only included the already cooked batch/frozen dishes.

Miller and Carter have been consistently good for us so far, in restaurants over 200 miles apart. Brasserie Blanc not always consistent.

These are Heartwood Inns - same company as Brasserie Blanc and pretty much the same menu.

There are a couple of ‘clubs’ near us owned by the same people. One is very good and the other not so good. They have different chefs and the layout in one is much better than the other. Same with Maccas and Kentucky Fried, some are better than others. Many of them are franchises. I went to a new Maccas for a quick snack and it was filthy so I sent an email to their HQ . They were most apologetic and the manager of that particular outlet apologised profusely so at least they followed it up.

I think that because I don't usually use chains at all (and then found myself so pleasantly surprised in Henley) I'd assumed that there would be a consistent offer.

It seems there is often quite a lot of difference between one and another whether paying £14 or £40 a head!
