Uncomplicated fish recipes please

DH didn't like fish and is allergic to shellfish but has now decided to try eating more fish.

Anyone suggest any quick yet tasty fish dishes I can try! Not complicated please until we establish whether he will eat them.

I love fish. But I also really love albacore tuna in a can. Make him a really nice tuna salad sandwich on good whole grain bread, with a side of chips (crisps) - it makes a great lunch.

My tuna salad is made very simply by using ONLY mayonnaise and a couple spoonfuls of a sweet relish. I could eat it every day.

Or, how about a grilled tuna melt sandwich - put tuna salad on favorite bread, add a slice or two of a melty mild cheddar cheese, butter two outside slices and grill in a pan both sides till cheese is melted. Delish!

My husband makes a wonderful smoked haddock gratin which is pan fried smoked haddock laid on top of a creamy mash potato topped with grated cheese and bacon lardons finished under the grill to melt the cheese. This usually served with green beans, absolutely delicious and quick to make the longest thing to cook is the potatoes.

Another fan of a take on Cullen skink. I soak frozen smoked haddock in milk then when defrosted poach for two minutes or so until barely cooked. Remove the skin and keep milk. Sweat onions and leeks in olive oil, add a chopped potato, some mushrooms and gently fry. Add milk from fish and cook until al dented adding salt, pepper any herbs you like, maybe dill or parsley, add cooked and flaked fish, heat through gently so fish doesn't break up. My cousin, an excellent cook, said she was never going to eat anything else when she tasted it 🤣. It isn't strongly fishy at all, just warm and comforting.

Iceland Arctic Royal cod loins £12 for 4, BUT one is large enough for two. Thaw one together with enough cooked peeled king prawns to make up to 8 ounces in all. Get your veg simmering (tin spuds plus other). Heat teaspoon of butter, swish of olive oil, sprinkle of herbs/salt/black pepper - just bubbling - cook the cod, adding the prawns after a minute or 2, then some tomato puree. Stir about and cook with a lid on 3 minutes. Seems best if you can catch it as soon as the cod is white through. Hope he (and you) like it.

A couple of very simple fish dishes - both are very tasty
Seabass fillets fried in oil with plenty of lemon juice squeezed over while frying.Served with anything you fancy.

My husband and I are not fans of fish but will eat cod . I bought some cod loins and made blackened cod ….. spice encrusted cod shallow fried . Served with patatas bravado and green beans ….. was delicious x

We used to love a fish pie, a mashed potato topping and using a tin of Cheshwood creamed mushrooms as the sauce, unfortunately they no longer produce it & all the soups & sauces I’ve tried since haven’t been as good sadly

Already mentioned .... I make a tomato based sauce ( onion, garlic, peppers?) and toward end gently poach a piece of white fish (cod, haddock, monkfish) on top until cooked. Lid on so it steam cooks as well.

Al cartoccio never fails. One layer of onion rings, fish in foil with dressing and lemon, tomato halves stuffed with garlic in corners, and cover with potatoes cut into circles. Sprinkle with fennel / poppy / sesame, drizzle with oil, and fill up top just below the potatoes with water. Bake until potatoes are crispy on top.

Fish cakes. Whatever fish you want, cooked, flaked into mash, add dill or parsley = traditional fish cake, add chilli flakes call it Thai fish cake, fry/bake, served with whatever you fancy.
Fish fillets (any). mince garlic, fry in olive oil, put fish in, fry both sides, just before it's done, throw in chopped coriander and lime juice. Variations, add fresh ginger with the garlic, or dill, or/and chilli flakes always add extra lime & extra coriander to serve . taa daa. Drizzle pan juices over the veg/ rice/ pasta/ salad what ever.

Buy a jar of tartare sauce and cover the fish with some and then bake in the oven Serve with any vegetables you fancy

Hot or cold poached salmon is easy and versatile :

Make a bed of spring onions , slivers of carrot (optional) and herbs (parsley or dill)with slices of lemon in a heavy frying pan .
Drink a glass of white wine as you cook and add a glassful to the water !
Lay the salmon slices on top and cover with cold water .
Bring slowly up to the boil and turn down quickly .
Cover with tin foil .
Thin slices can cook within six minutes and thicker slices take up to 12 minutes .
Test with a fork -cooked salmon will flake away .
I don't like the skin and remove it .

I might serve it hot with fresh minted and buttered peas and boiled potatoes and some caper sauce .
Or

Cold on a bed of shredded lettuce with thinly sliced cucumbers and mayonnaise .
I might sprinkle the dish with finely chopped spring onions and extra herbs .
Sometimes I add a splash of tomato ketchup to the mayonnaise and even a splash of brandy to make a Marie Rose dressing .
On special occasions I've added cooked prawns to cover the salmon .
This is nice with a baked potato .
And more wine !

my OH likes his lemon sole poached in water with a little white wine and a slice of lemon .take out the fish add a couple of tablespoons of cream and an egg yolk to thicken .If you like fruit with fish add some halved green grapes before serving,I serve with new potatoes and green beans .Takes less than five minutes so have your veg ready first

Almost all white fish I just mix breadcrumbs with a little lemon pepper and gently pan-fry with a mix of oil and butter. The butter helps to brown the crumbs.

I’ve just remembered a delicious fish dish I ate on holiday 2 weeks ago. It was called Branzino in Crosta di patate. It was very,very thin slices of potato and thyme on the base and the top with sea bass fillets in the middle almost like a parcel. Very yummy and one I will try and recreate myself.

Haddock, Seabass or Cod Fish Tagine or In Papillote Paper ..

Extra virgin olive oil
Chopped fresh parsley
1 tablespoon of Paprika
2 teasp. ground turmeric
2 or 4 fillets of white fish of choice
2 carrots peeled and finely sliced
1 medium sized onion or shallots or leek
1 lemon thinly sliced
salt to taste
1/2 tsp of freshly ground black peppercorns
1 medium red bell pepper
12 black Kalamata

Mix the first 7 ingredients in a medium sized bowl.
Add the fish fillets and marinate for 2 hours.
Preheat the oven.
Arrange the carrot slices over bottom of either a tagine or a glass casserole.
Layer red tomato slices, half the onion or leeks or shallots and then the halves of one lemon.
Arrange the fish as your top layer. Then place the red bell strips or slices on top of the fish.
Now place the olives.
Last but not least, drizzle the "marinade" on top of the fish.

Bake until the fish flakes easily and the vegetables are tender, approx. 30 minutes.
Garnish with chopped fresh parsley.

Place a cover over the casserole if not using a tagine.
Pre heat oven.

I bake salmon with a 'crust' of chopped Brazil nuts, chopped dried apricots, blobs of cream cheese or slithers of bacon (or both actually!). Bit of foil over the top to stop it drying too much. Dead easy.
