I’m not used to this much baking!

For dh’s birthday do, family descending tomorrow:

1 x the essential (for dh) chocolate sandwich cake, layers made but yet to be smothered in chocolate butter icing

1 x lemon meringue pie (dh’s favourite) - pastry for shell made but not rolled out/baked, let alone the filling

1 x Apple crumble (for Gdcs who always want it), topping made and waiting in the fridge, still need apples (dh will get later).

Just as well the actual lunch tomorrow will be relatively simple!

All went down very well, thanks everybody!

Main course lunch was v easy - baked gammon, jacket potatoes and my ‘signature’ coleslaw for adults, but mash and cut up peppers/cucumber/cherry toms for Gdcs.

And dd2 brought lots of lovely cheese. 😋

It gives you a warm glow when you know your family enjoy your cooking/baking, but it makes me slightly nervous that one time it won’t come up to scratch.
Lasagne is the dish I get requests for, and sticky toffee pudding.

I only call it that because a dd often requests it!
I don’t grate anything, just chop/fairly finely slice white cabbage, carrot, onion, celery and apple, pref. a red skinned one. And only just enough mayonnaise to bind.

Witzend yum to it all. Had 2 friends for lunch on Saturday. Made a gluten free galette with ready roll gluten free puff pastry. I can't use a rolling pin anymore. Filled with tom chutney my own,peppers , chestnut mushrooms,spring onions and cherry tomatoes topped with Somerset goats cheese . Gluten free steamed golden syrup sponge and vanilla custard. Made a gluten free apple cake for then to take home and 7 jars of my preserves. X had seconds of galette and finished it off. Been years since I made one and had never made golden syrup steamed sponge with gluten free flour just added extra milk and it was light and delicious if I must say so myself.

I'm not a very enthusiastic baker, although I will make an effort occasionally. I invariably make a huge mess while doing it. DH misses his mother's baked goods, she made wonderful cakes and biscuits and her shortbread was delightful.
Yesterday I baked a rolled gingerbread for him since he requested it.
It turned out well and he's enjoying it.
