Sausage rolls

I make my sausage rolls using puff pastry from the supermarket and sausage meat. I freeze them uncooked and when ready to use them pop them in oven straight from freezer, basted with beaten egg in a hot oven for around 30 mins.

Do others cook them first and then freeze ? What do you think works best? I am always worried about reheating cooked sausage rolls.

I make mine snd freeze them uncooked. Then cook them from frozen.

I only make sausage rolls at Christmas, though. They're such a faff I can't be bothered at any other time.

I have done it both ways and the already cooked ones reheat fine but the frozen and then cooked ones the pastry is flakier.

I wouldn’t have noticed but last year I had both types on the buffet table and by comparison I preferred the just cooked ones.

I make mine for special occasions using my own rough puff pastry adding tasty extras pickles chutneys etc.
I do also have Greggs uncooked sausage rolls from Iceland in the freezer brilliant if people turn up unexpected to put in the oven.

Freeze then cook, though I don’t often bother now. Booths make some excellent mega sausage rolls that you can buy cooked or uncooked.

I make my own, and cook them first before freezing - well, I need to taste a couple for quality control purposes...
I let them thaw out slightly, then place in a hot oven for a few minutes.

When I was in catering, a while ago now, I used to make them first using bought puff pastry then put them in the freezer, I found this worked best for me and they always tasted fine.

Just curious, if you use frozen and thawed puff pastry, make the sausage rolls then refreeze them,is that not bad? It says on the packet not to refreeze thawed pastry.🤔

That’s a good point. Doing that hasn’t poisoned me yet, but now I’ll worry-at least for the next couple of times and I won’t mention it to my DGS!

You can buy chilled puff pastry.

You could, of course, make your own grin
But even Mary Berry doesn't do that

I do the same as you puff pastry, sausage meat and freeze raw. I have been in the garden all morning and tou have just put me in the notion for a sausage roll yummy

We don't really eat many sausage rolls, but if I'm taking snacks for a communal meal I usually cook them fresh.
However I've sometimes not had time and have bought the M&S ready cooked ones. If glazed with egg and heated through well they're delicious. Several friends have said that they thought I'd made them myself.

I just made a batch (using the chilled puff pastry) of sausage, cheese and pickle rolls. They were delicious!

I make short crust pastry, roll, assemble, freeze, bake as needed. Two of our daughter like sausage rolls, one has First Advent Sunday as her family Christmas meal, the rolls are in the freezer.

They all like a good variety of starters before Christmas Lunch.

My Mum used to make them with her own shortcrust pastry, Norah, I'd forgotten that. Hers were lovely.

Much prefer them with shortcrust pastry, my neighbour's sausage rolls are exquisite.

I make mine using the Delia Smith quick flaky pastry recipe then freeze them uncooked.

I think I will carry on freezing mine raw but may try the chilled shortcrust pastry for a change. I’m off to a local renowned butcher for more sausagemeat to do the Christmas ones next week.
