Jamaican Black cake - it does need the fruit to be soaked in rum for at least a few days beforehand.

There are lots of recipes online. Here's one:

We like a lighter version of Christmas cake, so I’d recommend Delia Smiths Dundee cake recipe, enhanced by a good dose of whisky, made in the next few days and then fed weekly with more whisky until Christmas. I don’t make it before now because it will dry out - it’s not as rich as a traditional cake.

I wish I could bake a Christmas cake never mind give a favourite recipe. Mine have all turned into bricks so I gave up.

I went to Marks and Spencer, bought a lovely un iced Christmas cake, laced it in Brandy and passed it off as mine.

Hi,
Christmas is coming, so I'm looking for new cake recipes.
Would you like to share your favorite Christmas recipes?

PS. I really like cakes with nuts or poppy seeds smile
