What to do with over cooked Beef?

I over cooked the beef yesterday. I usually have it medium rare. I've got a good sized piece left.
Has anyone got any ideas how I can use it up?
I've got Stilton in the fridge and all the usual staples to use.
I hate to waste it , but would struggle to eat as it is.
Many thanks for any suggestions.

We used to have my mum’s old mincer, but it needed to be fastened to the table edge, and over time it went rusty.
That's what I was thinking of 🙂
I had one as well years ago, a bit more modern than my Mum's but not as good.

Do you have old-fashioned mincers, do you chop the meat in a food processor or do you use another gadget?

DH uses the food processor.

We used to have my mum’s old mincer, but it needed to be fastened to the table edge, and over time it went rusty.

I’m glad you’ve decided what to do with your beef mumski. It will be delicious.

I did beef, too, and although not overcooked it was more well done than medium (and I prefer it slightly pink). Still nice, though, and not tough. However, there was quite a lot left, so I minced it up and divided into two portions. One portion I used to make a cottage pie which we had day after Boxing Day. The other half I’ve put in a box and frozen to use another time - either for another cottage pie or perhaps for a chilli con carne.

Beef stroganoff.
Slice onions thinly, fry gently, add mushrooms, cut beef into strips, add reheat thoroughly with a stock cube, a little water and tomato purée, simmer, add sour cream then stir till heated but do not recoil.

Serve with boiled rice.

Slice it up and portion it - put in the freezer and then braise a portion with some lovely root veggies for a hearty beef casserole. Even better with dumplings.

We have a fox that visits our back garden almost every night, any leftover food or food that has gone slightly out of date is left out for him/her. Waste not want not !!

Mince it with onions and cook with chopped carrots gravy and make a shepherds pie!
Curry?
Meat pie?
Stew (using all left over veg)
