Pigs in blankets casserole - can anyone share a recipe please?

I made this last week. It was great. I used the recipe from the Ocado website but didn’t use stuffing or stock. I made gravy to add on the plate. Good luck!

Yes, I would fry them first. A bit like you fry the porc lardons before chucking them into a boeuf bourguignon. Your mash potato idea would work well leaving out the sweet potato and replacing it with maybe carrots?
But I've never done this with actual pigs, just inventing it in my mind!

i often use the packet mixes in the slow cooker btw when I'm working i don't think any of them are bad

I think a pigs in blankets casserole is a bad idea.
The bacon needs to be crisp, it will be a soggy mess and the bacon will come off the sausages.
I would cook them in the oven and in a separate roasting tin do some lovely roasted veg, toms, peppers mushrooms onion, courgettes etc.
serve with lots of warm crusty bread.

I see your point, but several people suggested it when I said I had a lot of PIBs, so I thought it must be a 'thing'.

personally I would make a vegetarian stew (either vegetable or bean based) and cook the pigs and blankets separate because i prefer the texture of them roasted in the oven and not soft like in a stew

So roast them and then add, or serve separately? I thought I'd do them in the air fryer and then add to the casserole. I'm never confident that sausage cooks thoroughly unless I can see inside it grin.

I'm groping in the dark, rather, which is why I wondered if there is a recipe that people have made before and know works, particularly as I will be sharing it with friends.

Thanks, escaped. Yes, I am open to all suggestions, really. Would you bake or fry the PIBs first? And add veg other than the sweet potatoes? I had thought of serving it with mash - either potatoes or sweet potatoes with Boursin, (which is delicious, incidentally), so would probably swap out SPs for something else.

Would you be up for a sausage cassoulet? You add haricot beans, chopped sweet potatoes to a can of chopped tomatoes and provençal herbs, plus an onion and a touch of chilli.
Oh and 150 ml red wine!

I mentioned that I have a surfeit of pigs in blankets, and there are dozens of them in the freezer. Mr Dog is vegetarian so using them up isn't as easy as it might have been.

People suggested a pigs in blankets casserole, which is a great idea - particularly as I have friends coming for an informal supper tomorrow, they are all meat eaters, and Mr D won't be there. I've googled, and there are various options, ranging from one using a packet of sausage casserole mix to slightly fancier versions. Some have traditional veg such as carrots and parsnips, and others more Mediterranean ones such as peppers and courgettes, and I'm not sure which way to go.

I have a grocery delivery coming tomorrow, so can add any ingredients I don't have in, but wonder if anyone has a tried and tested recipe they don't mind sharing, please? There will be four of us.

As I say, this is an informal thing, so it doesn't have to be 'impressive', but obviously the tastier the better. I do have time to faff if necessary, and am equally comfortable with using a casserole mix (they are basically herbs, spices and cornflour, I believe), but a recommendation would be really helpful if anyone has one.
