Pigs in blankets casserole - can anyone share a recipe please?

I mentioned that I have a surfeit of pigs in blankets, and there are dozens of them in the freezer. Mr Dog is vegetarian so using them up isn't as easy as it might have been.

People suggested a pigs in blankets casserole, which is a great idea - particularly as I have friends coming for an informal supper tomorrow, they are all meat eaters, and Mr D won't be there. I've googled, and there are various options, ranging from one using a packet of sausage casserole mix to slightly fancier versions. Some have traditional veg such as carrots and parsnips, and others more Mediterranean ones such as peppers and courgettes, and I'm not sure which way to go.

I have a grocery delivery coming tomorrow, so can add any ingredients I don't have in, but wonder if anyone has a tried and tested recipe they don't mind sharing, please? There will be four of us.

As I say, this is an informal thing, so it doesn't have to be 'impressive', but obviously the tastier the better. I do have time to faff if necessary, and am equally comfortable with using a casserole mix (they are basically herbs, spices and cornflour, I believe), but a recommendation would be really helpful if anyone has one.

I do usually just use sausages rather than pigs in blankets as we never seem to have any of those leftover. Very tasty and perfect for a warming meal on a snowy day like today.

PIB toad is great even if you use large sausage at other times of the year, but I have to partially cook them first so they are properly cooked once in the batter.

Bake the PIB in a large oven tray, like a toad in the hole, using less batter so that the tops can still be crispy

I ended up roasting potatoes, parsnips, carrots and onions and adding in cooked PIBs and stuffing balls at the end. I served them with gravy and cranberry sauce on the side. It was delicious.

Nice solution.

Our GC love roasted veg, add PIB - perfect meal at ours.

Witzend- you can still make bigger PIB yourself with streaky bacon and make the toad in hole? My eldest son does them other times and the kids love them just as sandwiches.yum.

Thanks for PIB toad in hole idea-i managed to get some pork& apple PIB as one son only eats pork & apple sausages, but he does like yorkshires- so ill combine the two.many thanks.😋

You know what? If you are worried about this, I would either make a casserole of something you are sure and confident with, and either use the PIB for yourselves later or give them away to a friend to use, or alternatively round my house my son was definitely the dustbin and could eat any and every thing so give them to him and do your own tried and tested recipe

I make a Christmas leftovers pie using everything from the meal (but not yorkshires, though could be served separately). Put it all in a large casserole - include gravy, meat, veges, pigs in blankets, bread sauce and cranberry sauce. Top with a layer of pastry and bake!

The toad sounds lovely. Maybe I'll rethink.

I'll check out the Ocado recipe, aonk, but might serve them as part of a 'pick and mix' offering, rather than in a casserole.

Not a casserole but I've done pib in a toad in th hole which worked out well

I was just going to suggest this....my son did this last year with leftovers, it was very nice.

I'd do just what Sago suggested. It sounds perfect.

We often make our own version of sausage casserole with the usual casserole type veg, but that's just with cut up butchers sausage. I think the idea of putting pigs in blankets in a casserole is a bit odd.

Oh I'm not sure I would go for this. The joy of Ps in Bs is their crispiness which would be lost in a casserole as they would go soggy!

My partner returned, from a well know supermarket chain, bearing a PIB quiche.

I would not recommend trying this.

We ate some for breakfast (air fried) with toast and scrambled egg.

I would recommend trying that.
