Using up the turkey - what are you doing - apart from curry?

I bought the smallest I could find🙂

Curry, cant think of anything thing worse. Pies, soup, fricasse, plenty to choose from. Don't buy such a big one!

I put the left over meat out for the birds, on my high bird table. The big corvids made short work of it.

(I don’t eat meat and DD2 didn’t want to take any home).

We once stayed with friends in the country who hung their large turkey carcass, with lots of bits remaining, on a tree in the garden for various birds to strip. Which they did, but it looked seriously gruesome, especially in the dark - like a pale corpse swinging on a gibbet!

Turkey soup, boil carcass, remove all bones, add some pearl barley, onion, carrot, swede & parsnip, not too much. If you've had sage and onion stuffing, add some that's left over. Delicious.

We had that after I’d stripped the turkey and boiled up the carcass for stock. As always, it was very tasty.

So far we have had soup, Christmas pie, fricassee and a pilau and lots of refreshing tukey sandwiches for our light meal - and that is it gone, also had gammon steak and a ham and potato pie and a sausagemeat ragu, which has used up the rest of the left overs from the Christmas day meal.

The remains (from NYE) are simmering in the slow cooker for hours to make stock which will be frozen in tubs.

Cold turkey can be used in place of chicken, cooked or raw in any and every chicken recipe you can think of.

Go into google type 'recipes chicken and you will have thousands of different recipes at your fingertips.

Shred into curried mayonnaise and use in wraps with veg or salads of your choice.

Make a thickish white sauce. Add small pieces of turkey and lightly cooked mushrooms. Put down centre of pancake or similar. Roll up. Lay in grill pan/ soldiers . Cheese on top . Grill. Delicious.

Our turkey fed nine on Christmas day, 7 on Boxing day (with ham), then 3 cold with mash & pickles & brocolli, then ham & leek & turkey pie for 2.
Plus slices for sandwiches.
I didn't have any to freeze but by the time I'd served that many meals it didn't owe us anything!

I did a turkey, ham and leek pie after Boxing Day . And froze the leftovers.

Tetrazzini.

Make Alfreddo sauce, add saute sliced mushrooms and cheese. Cook pasta. Layer pasta, sauce, turkey in a shallow baking dish. Parm on top. Bake.

Risotto.? Or with pasta for a tray bake, or mince and make turkey balls instead if meat balls.
Once frozen it should last months so you can ring the changes over the next month or two.
I have been married 55 years and never bought a turkey. We always have something else as dh thinks it’s dry !
I have let him win this argument over the years. We are a small family and they always seem so big which means dealing with leftovers. grin

Soup.

Broth, onion, carrot, celery, brown rice, thyme, bay leaf, parsley, salt, pepper. Once finished cooking add turkey and serve.

After stripping ours on the 28th, I’ve ended up with at least 6 foil packets of ‘bits’ in the freezer.

Last night we had a substantial mulligatawny, with rice and lots of veg, and in a few days we’ll be having a turkey, leek and mushroom pie (mash, not pastry).
Would welcome other ideas, apart from curry, though!
