Brown Hard-Boiled Eggs v White Hard-Boiled Eggs

Why are the former fairly easily peeled, but the latter are difficult, fiddly and the shell disintegrates into a million bits.
Every time I attempt to peel a white-shell hard-boiled egg, it feels like it's taking forever.

My eggs are white, free range from Waitrose. The majority are easily peeled aled. The odd one proves fiddly.
I've peeled a fair few brown eggs in my life. They compare similarly with the white ones I would say.

Think it’s more to do with how fresh the eggs are.

I peeled three (brown) this morning ready for a fish pie.

All peeled well.

Then another day, regardless of colour, they peel messily and badly.

I can’t believe there is any connection with the colour, you must just have been unlucky.
Do you plunge the eggs in cold water or run them under the cold tap as soon as you have drained them?

I always put mine in cold water after boiling, to stop the yolks going black around the edges RosieandherMaw

Still doesn’t ensure they always peel well though.

Eggs at getting really scarce here because of bird flu but when we can get them they are nearly all brown. I always get free range, hate the thought of chooks all huddled together in pens.

Not if you can catch the yolk before it sets!
Getting the timing just right is crucial, show me a Salade Niçoise or Fish Pie with eggs where the egg whites are set but the yolk barely so .

I love hard boiled eggs and like the OP the brown ones peel more easily despite plunging them in cold water.

I use an egg steamer when I want hard-boiled eggs. They always peel really easily and I wonder whether it's because the top of the shell has to be pierced before steaming?

Why bother they all taste horrible?

Depends on personal taste and what you do with them. I love a h-b egg as garnish for a curry or savoury rice.

I haven’t seen white eggs for years.The brown ones look better anyway.I buy free range large ones, it’s something I do regardless of cost ( for a change!)

This post makes me think of scotch eggs. Used to make these but they were cooked in a deep fryer which I would never do these days. Even wondered if I could try them in my air fryer.

The shell colour is due to the type of hen. And, the choice of colour depends on the purchasers.. The British favour brown eggs because they think they are healthier (like brown bread), in France, I believe all the eggs are white because they don’t like brown ones….

I love a just right boiled egg but I rarely achieve it! I prefer my eggs fried in very little oil, on sourdough toast with salted butter 😋

I rarely get it right Roses so the other day when I did I was sooo chuffed.

Not the point, I know, but I have yet to understand why anyone would want to put hard boiled eggs in a fish pie. Even if it’s specified in a supposedly ‘luxury’ recipe.

Last week I bought brown eggs (free range) in a small local supermarket in France (fairly rural village area) - I doubt they’d bother stock them if they weren’t popular. It’s much easier now to be able to find FR than it was a few years ago.

It's all about freshness not colour of the shell. I get mine from a friend, they are free range and I get a mix of white and brown shells, there's absolutely no difference between them in taste, how easily they shell or even size as they're all large.

White or brown, my mother didn’t like ‘eggy’ eggs. 😂
We never did find out exactly what made an egg ‘eggy’.
