Beetroot - fresh - ideas please

This is really easy.
Bake the beetroot to use it cooked in a bean and feta salad:

I sometimes just use as a veg with my main meal - roast in foil with a bit of salt.

Beetroot taboulleh - chopped beetroot, a few lentils, a bit of chopped red onion, add some cumin if you like it and I add coriander, mint, fresh leaf parsley - or just one or two of those depending on what you have. A little ordinary malt vinegar and some sea salt. Delish.

Beetroot jelly, a super savoury with salad, dh loves it plus all things beetroot. I hate anything beetroot.

I make a lovely dip with beetroot, Greek yoghurt and grapefruit. It is very refreshing and lovely with salad.

Beetroot goes really well with goats' cheese - in a salad or risotto, maybe.

Ideas sound good, thank you. Hadn't thought about sweet ideas. I could make some tomorrow so that I can give some to any guests over the weekend. Or I might have to eat them myself (sigh)!
