For anyone with a glut of French beans…

….especially if they’re a little bit past their best.

There’s a Greek green bean stew called fasolakia, with onion, garlic, tomatoes (I use tinned) olive oil, plenty of parsley. There’s a recipe online somewhere, it’s pretty simple.

I made one last night, with frozen beans! - because I just fancied it. Just simmered in a saucepan.
Nice fresh crusty bread to mop up the juices. I added some cubes of fried halloumi to serve, just because we like that, too.

A good veggie dinner, if anyone wants a change.

I have gone over to mange tout if I find green beans in a recipe

I still see them now and then but the season is short and they’re pricey. I do love fresh runner beans, though!

I used to do the blanching but not only a faff but didn't taste nice so, like RedRidingHood, I just slice and freeze and they are fine.

My french beans are almost over now but I'll try some of these recipes.
Lots of runners coming now. I don't usually water but I did this year and it's paid off.
I freeze tons, don't bother blanching just slice in my bean slicer and freeze. Always ha8home grown beans at Christmas dinner

I make chutney every year and it lasts ages.

My favourite way with runner beans is to barely cook in salted water with dash of sugan. Then add to chpped garlic fried in butter. Many years ago there were gluts in father's garden that involved freezing after parboil then chilled in iced water... Never as good as fresh so dont bother now.

Again from my Turkish cookbook, we like kabak mücver - courgette fritters. Or, a couple of years ago when we had a glut of courgettes, I made a courgette and lime loaf cake which was absolutely delicious.

You've reminded me that there was a recipe for lemon drizzle cake made with courgette in the latest GH newsletter:

Sounds great and we do have heaps of beans. But DH would say”Where’s the meat”.

Sounds like our house! My husband is a dedicated carnivore, he's OK with pulses added to meat, but not instead of meat.

Made courgette and ginger jam last year but I love courgettes so much as a veggie I stir fry them most days with lots of other vegis and whatever seasoning I fancy

Completely overrun with runner beans giving them away as fast as I can I planted two lots green runners and yellow runners they are really nice my friends love me in the summer

I’ve made a courgette and lemon cake, a chocolate, courgette and hazelnut cake and a lovely big pot of courgette soup with ginger and garlic. To be fair my courgettes were more like marrows 😉

We made ‘Dilly’ beans once. In Kilner jars with lots of added dill. They went on the compost heap also

My mother once coped with a glut of runner beans by bottling them in salt in Kilner jars. This was long before freezers. We moved house and took the massive weight of bean-filled jars and when winter came they were opened, tasted then emptied onto the compost heap.

Lathyrus I mix chunks of courgette, garlic, fresh tomatoes, chopped onions and olive oil plus seasoning to taste. Cook in the air fryer 180 on bake for about 18 minutes. Can be done in the oven or on the hob. I have it with grated cheese, or other vegetarian options. Chicken or fish goes well with it too.

I do this, we have it with rice and crusty bread.Done in the oven.

I use a mandolin to slice courgettes into ribbons. Into the pot with a spoonful of olive oil. Cook on the lowest setting for anything up to half an hour, adding garlic and lemon juice towards the end. The courgettes slowly collapse down to almost a thick sauce. Pasta and parmesan completes a foolproof dinner.

That’s why I make it with frozen ones. Garden is too titchy to grow any.
