A tin of tomatoes !

I’ve never been known for my cooking skills.

DH doesn’t like waste and he has found a tin of tomatoes which expires this month.

He has asked me to find a simple recipe to use the tomatoes before the expiry date.

Please bear in mind I am a very basic and ‘reluctant’ cook but want to take up the challenge of using the tomatoes.

Can you please come up with a simple recipe, no more than 6 ingredients including the tomatoes. Thanks.

PS DH often cooks but I want to take up his challenge.

Easiest and quickest Pasta Puttanesca
1 tin tomatoes, chopped
1 tin anchovies
1 red chilli, chopped
5 cloves garlic, crushed
1 tbsp capers
2 tbsp olives
Simmer for half an hour and pour over pasta 😋

We eat them with sausage and mash, Heated in micro. with a dash of soy sauce and a pinch of chilli. What's easier than that?

Over pasta, this is lovely with veg and salad.

1 red pepper, seeds removed and cut into large chunks
1 large carrot, peeled and diced
1 garlic clove, crushed (or a bit of garlic powder)
300ml vegetable stock (or water and a cube)
400g tin chopped tomatoes
2-3 tbsp tomato puree
2 fresh thyme sprigs
250g baby new potatoes, skin on, sliced into thick discs
salt and pepper

Nothing will happen to the contents of your tin of tomatoes if you do not use them before the end of the month.

Tinned food has a 'best before' date not a 'use by' date and all it means is that potentially the flavour could (not will) deteriorate after that date.

Oe of my aunts was a food hoarder. When she died, she had about 40 or more tins of food in the cellar all past their best by dates. Some years past them.

Over a couple of months, when visiting to sort the house out I gradually consumed the contents of the cellar. The flavour of one tin of soup had deteriorated and it got chicked down the sink. The rest tasted as good as ever.

The cache contained tins of vegetables, soup, tinned fruit, baked beans and tinned spaghetti. We ate it all and it did us no harm.

Stocks of canned food 50 years or more have been found, opened, and found to be edible.

Curry.
A couple of onions, chopped into small blocks.
pepper red or green chopped.
Mushrooms sliced
Chicken or meat of choice
Your tomatoes. Chickpeas
Pataks curry paste
I use balti 1/4 jar. 1/2 pint water.
Fry off onions, peppers, chicken pieces, add tomatoes, water. Put a on low heat ( I use pressure cooker).
Serve with rice & nan.

Tinned tomatotes: best thing ever! Blend the tomatoes with a tin of baked beans. Add grated cheese for a creamy yummy soup for two.

For any recipe using tinned tomatoes, I always add a pinch of sugar, to enhance the flavour. (So does Mary Berry! smile )

Similar to the Mary Berry sausage casserole - you could use vegan sausages if you eat them. Yes, it's very tasty, her recipe also has onion.

Quick meal
Ingredients
. Cooked rice, tin tuna , tin toms, onion and garlic , two peppers.

Cook onion and garlic,with some colourful peppers. Add tomatoes, rice and tuna and anything leftover or tin of beans. Add French dressing.

A simple tomato sauce,
Fry a chopped onion in some olive oil, ( preferably) although rapeseed is good, add crushed garlic , either one of two, sprinkle some salt over to stop it burning , when soft add the tinned tomatoes , crush them if they are whole, add a good squeeze of tomato puree and some dried oregano and chillies , and a splash of balsamic vinegar ,simmer for about 20/25 minutes on a very low heat, if it is a bit dry add some water, I usually wash out the tin and use a bit of that. You can serve this with pasta , gnocchi are lovely or you can serve with pan fried salmon or cod or chicken.

I will adapt Crosstitchfan's recipe by putting bread, cheese and tin tom in a buttered pyrex dish and toasting in the oven.

I have just used a tin of coconut milk 9 months out of date, curry was delicious so I think your tin tomatoes will be ok.

Put a good helping of cooked mushrooms on toast, I like them gently fried in butter and garlic, spoon on the heated tomatoes.
Sprinkle on grated cheese and add a poached egg.
I like to add some soy or Worcestershire sauce to the toms and let them simmer down for a few mins, but just do it all to suit your own taste.

Chop an onion add a little olive oil then microwave for 10 mins.
Then add a tin of tomatoes and 1/2 tsp salt, microwave for 20 mins.
Meanwhile, cook spaghetti.
When tomato sauce is cooked, let it cool a bit before stirring in grated cheddar then toss through the spaghetti.
Known as cheesy spaghetti in our house, it’s tasty and relatively quick.

Marcella Hazan's famous tomato sauce recipe - 1 x tin of tomatoes, 1 x peeled whole onion, 5 tablespoons of unsalted butter, pinch of salt - all into a saucepan and simmered for 45 mins. Then remove the onion and enjoy the sauce on pasta, toast, jacket potato etc. Rich but delicious.

Slow cooker chicken - pkt slow cooker mix, couple of chicken breasts, tin of tomatoes, couple of peppers chopped up. Chuck into the slow cooker, and retreat until done. You can add red onions garlic, herbs if you want but not mandatory.

Boil pasta ( a shake of salt) , drain, tip in tomatoes and attack with knife if whole. Bring back to hot. Tip in tin of tuna or chopped ham and stir, serve.

Option to add pepper for flavour
