A tin of tomatoes !

I’ve never been known for my cooking skills.

DH doesn’t like waste and he has found a tin of tomatoes which expires this month.

He has asked me to find a simple recipe to use the tomatoes before the expiry date.

Please bear in mind I am a very basic and ‘reluctant’ cook but want to take up the challenge of using the tomatoes.

Can you please come up with a simple recipe, no more than 6 ingredients including the tomatoes. Thanks.

PS DH often cooks but I want to take up his challenge.

Onions, red peppers, tin of tomatoes, seasoning and some red lentils - make lovely soup. I do not use recipes so this is for others who make it up as they go along! Good luck!

I often chop a load of veg, peppers, onions, courgettes, mushrooms etc stir fry them, add a tin of tomatoes and it makes a lovely meal with sausages or chicken or whatever you choose, with boiled potatoes

Fry some onions and garlic if you wish, add the toms, reduce for a bit, add salt, a little chilli powder or pepper, add a tin of butter beans, cook a for a little longer then serve with hot buttered toast. A nice take on beans on toast.

Here are 2...
1/2 pint water
1Vegetable stock
2 carrots 🥕
1 onion
1 Courgette
Boiled together for 20 mins or so! Might be 1 pint water but don’t fully remember now.
Can be put in liquidiser if preferred.

Tin drained tuna
Tin drained sweet corn
Tin tomatoes
Bung in microwave for wee turn.
Serve with grilled garlic pitta breads.

Two portions of salmon or trout, in tinfoil (oil the tinfoil first). Cover with the tinned tomatoes and mushrooms if liked ( can be tinned too) . Sprinkle with mixed herbs and bake at 180 for 20 mins. Serve with new potatoes and green beans. A delicious quick and easy meal.

Onion
Garlic
Oil to fry
Mince
Tin of toms
Worcester sauce
Salt
Tin of kidney or any other beans

Beauty of this is that you can leave out any or all of the ingredients except the toms and Worcester it's still nice. Quantities don't matter.

Fry onion and garlic, add mince, breakup and brown it.
Add tomatoes, salt and a good shake of Worcester sauce. Bring to boil then simmer for 30 mins or till you think it's done.
