A healthy(er) treat (for those who give a damn) would be these Fruity Oatcakes - more like a scone but not “claggy”
4 ounces of each
of 4 ingredients;
Porridge oats
Wholemealflour(could be self raising version it won’t hurt)
Date purée
Vegan spread.
….. Just mingle flour &oats in a bowl then put chopped up dates and buttery spread in small milk pan gently heat ‘til nice and squidgy while mashing with a wooden spoon or similar,
it won’t take long
Then add to the bowl and finish off with hands to make sure it’s all incorporated.
Then sprinkle of flour on surface, form or use cutter making them quite tall. Bake on gas 4 or 5 for 15/20 mins - this makes about 4 or 5 decent ones.
Sounds boring but very addictive!
Cut open and coat with more spread and eat and they go well with yoghurt in a dish and can be made with apricots as an alternative.
Best eaten within one day - no prob there😋
